As you commented on my blog, we see the 'springing back' action not only with the dough but also when rolling. I too had the same problem when I recently prepared luchis. <BR/>If I refrigerate the dough, I put it in the MW for 30 seconds and then knead for a few seconds. Since luchi is deep fried, if flour is used while rolling, the flour falls in the oil and browns the oil.
