Stuffed Mushroom in the Oven

Sometimes I think I am desperate to put every thing I see on my blog.

Lovely things. Things that I could have admired, soaked in their beauty and just let them live in my memory. But no, I want them to be here, to share with you all.

Like say this cute red tubewell at an arboretum I had refused to visit.




Or this Father's Day gift that the girls made. The gift coupon idea was from Pinterest and we  added some chocolates.




Or even these simple stuffed mushrooms. Very easy. Very good.

After devouring delicious lobster filled mushrooms at friend B's place, I have been on the lookout for an opportunity to make them. However I never bought the lobster and crab meat she had used as stuffing. But I had the mushrooms, so I went vegetarian. They were very easy to make and really, truly delicious. Now, I did not follow any set recipe and you can go creative with what you put in those mushrooms. This is how I did it.



Buy a box of portabella mushrooms or white button mushrooms

Pull out the stems. Pop.

Now give them a good rinse. Pat them dry. To was or not to wash a mushroom is a quandary I am always in.

In a frying pan heat 2 tsp of Olive oil. To the oil add 2 clove of garlic finely chopped. Saute till you get the beautiful aroma of garlic.
Now add the mushroom caps to the pan and toss them around. Sprinkle some salt on them. Sprinkle some other spices like pepper powder, or cajun spices etc. Take your pick. Make sure that you coat the 'rooms with oil. Just couple of minutes is fine.

Take them out along with the garlic and place them stem side up on a baking dish.

Now comes the being creative part.

The things I put in each of the mushroom cap
finely chopped red onion
finely chopped green onion
bread crumbs
finely chopped herbs (basil/parsley)
Then I put some cheese on each of the caps.

You can do your own thing with the stuffing. Totally. 

Update 02/02/2016: It has been almost 3 years since this post and I have done these mushrooms in so many different ways. One that I particularly find great for a party is where I make the stuffing as follows.
Saute finely chopped red onion, finely chopped green chili(optional) and the finely chopped mushroom stem until cooked. Take it out in a bowl. While still warm add seasoned panko or bread crumbs to it. Season with salt as needed. Add a a tub of mascarpone cheese. Mix well to get a creamy mixture.
Use this to stuff the mushrooms. No need to add extra cheese on top.

Next I drizzle them lightly with some more olive oil.

Pop in the oven at 350F for 15mins or until cheese melts.

That is it you are done. Ready to eat.


Now a little plug in about the book. Here are some more reviews that the book received. Most have been very positive. Sure there was one which said that the anecdotes are unremarkable and the book was under-edited and overwritten, and I have decided to rectify that by leading a Paris Hilton-esque life in my next birth. I will throw in a dash of Kardashian sisters too and some adventure at Atapuerca. Till then this is my life.

Maachher Paturi -- the new woman's twist

The word "paaturi" comes from the Bangla word "paata" or leaf . That said, it becomes crystal clear that "Maacher Paturi" or Fish Paturi is a preparation where the fish is cooked in some sort of a leaf.

It being a Bengali recipe. it also becomes more than crystal clear that the said fish has been marinated in a sharp, pungent mustard-y paste of shorshe bata and drizzled with mustard oil. Okay, apparently there is a non-Ghoti version where the fish is wrapped in other spice pastes, not necessarily mustard but I have not tried that.

Once these two bases have been covered you are free to "go as you like" on Maachher paturi.



More than 20-25 years ago,

1. The maacher paturi that I would eat would always be prepared by my Dida.
2. The fish would always be Ilish.
3. The leaf would always be Banana. Some homes do their paturi in gourd leaves like Lau Pata and they taste very good too.

Kolapata was easily available, an arm's length away, growing in perfect neglect amongst the jackfruit and pampered mangoes, making it the leaf of choice. Dida would dab the fresh Ilish pieces with shorshe bata and kaancha shorsher tel, throw in a few green chillies and wrap them up in cut rectangular pieces of the Banana leaf. With an expert hand she then neatly tied the fish parcels with twine, an act which I looked at with much wonder. Not being a very dexterous kind myself, I found the whole "tying with twine" part a very complex act and based on that memory of neat parcels alone, I labeled paturi as a dish difficult to concoct.

Once the parcels were ready, Dida would tuck them into the steaming rice, that was cooking in a large pot on the coal stove. This tucking would happen towards the very end of the rice cooking and the latent heat from the hot rice would steam the fish in their banana leaf parcels. When those leafy envelopes were opened to reveal the mustardy fish, the fragrance was ethereal. Have you ever taken a strong whiff of banana leaf that has been warmed with steaming rice and then spiked with aroma of shorsher tel and Ilish ? It is hard to describe. Just like it is hard to explain the fragrance of tea in earthen kulhars or the perfume of yellow stalked sheuli that has touched the wet earth on autumn mornings.

Some days Dida would also tuck those leafy fish parcels in the dying embers of the unoon or coal stove. The fish cooked slowly, soaking up the flickering heat and smoke, while Dida cleaned up the kitchen, took a shower and offered white balls of nokuldana to her Gopal. That Paaturi tasted a little different from the one cooked in steaming rice. Here the kolapata was lightly charred and had a smoky fragrance where in the other the flavor was more clean and dominated with the fragrance of rice.




20 plus years later, the paturi that I make has the new woman's twist on it. The fragrance is not exactly as it would be in Dida's kitchen.

1. The Banana leaf is bought frozen, in exchange of several dollars from an Asian Store.
2. The fish is not always Ilish and fillet of fish like Swai, Salmon and Tilapia are abundantly used. 
3. Instead of tucking the fish parcels in a pot of steaming rice or in dying embers, I just put them in the oven.
4. And oh, I never use twine to tie them up. I use toothpicks to secure the packets and heave a sigh of relief.

But the taste is pretty close. The fish cooked in the banana leaf, is delicate and flavorful, the mustard paste is just as sharp and pungent, the fragrance of the banana leaf as ethereal.

Some things never change.




You can also steam them in a steamer like this or do them over a covered griddle on the stove. But I almost always do it in the oven, because that way I can forget about them while they cook on timer and go about my life of getting homework done, folding the laundry and prepping for next day's lunch.

When it is dinner time, "ting-ting" there is delicious paturi to be had. Amazingly I had blogged about a Thai Fish wrapped in Banana leaves a couple of months ago and given a choice between the Bengali fish paturi and Thai fish in banana leaf, it is hard for us to choose. We love both equally.




Maachher Paturi -- Fish in mustard paste cooked in banana leaf

Prep

Clean the fish and get it ready. If you are using fish fillet cut each fillet in about 3"x 3" pieceI started with 2 fillet of swai, each cut in 3.

Make homemade Kashundi. The best option and that Kashundi will serve many purpose.

If you are reluctant to do so make Mustard Paste as follows:
Soak 3 tbsp of Mustard seeds + 1 tsp Poppy seeds in water for 20 minutes
Drain and put in a blender jar along with 4-5 hot green chillies.
With a splash of water make a thick paste.

Now if I am using fish other than Ilish/Hilsa, I also add 2 cloves of garlic to the blender jar and make a garlicky-mustard paste

In a bowl, pour the
mustard paste
1 tbsp Mustard oil
salt to taste 
pinch of turmeric powder
Mix and make a smooth paste.

Variations: Sometimes with mild fish that does not have much flavor of its own like Swai etc., I add some more things to the mustard paste. Like I add couple of tablespoons of dhonepata chaatni(coriander chutney) to the mustard paste and then use it as the marinade. Try it. Mustard with fresh coriander adds a beautiful layer of flavor.

If you have bought frozen banana leaves, defrost them first by keeping them out at room temperature. Then cut them in rectangles of 6" x 6" or your preferred size. Wash each piece. Dry. Keep aside.

Now I buy frozen banana leaves which are already wilted and perfect for wrapping.But if you have fresh banana leaves, you need to prep them for wrapping. First cut off the central thick rib and trim the edges. Then cut them in preferred size. To make them flexible you need to wilt them. For that pop them in the oven at 200F for 5-8 minutes or warm them over very low flame of your stove/gas range. Be careful that you do not char or burn them in the process.

Start Cooking

To marinade the fish, you can either use your home-made Kashundi or Mustard paste.
Put the fish fillet on the banana leaf.
Rub with sprinkle of salt (mustard paste already has salt so very little on fish) and smear generously with the mustard paste.
Add few drops of mustard oil.
Garnish with a tbsp of grated coconut and slit and chopped green chilli. If using frozen grated coconut , defrost it before using.






Wrap the banana leaf to make a parcel as shown. Secure the loose ends with a toothpick.

Now usually I let these parcels rest for about 30 minutes before popping them in the oven. For a big party, I make the parcels a day ahead and refrigerate(NOT freezer). And then just an hour before the meal, I take them out and let them sit at the counter. I put them in the oven 25-30 minutes before the meal is to be served. That way you get fresh steaming paaturi with minimal effort on party day.

Put the packets on a oven proof tray.  Pre-heat oven to 350F. Bake these fish parcels for 20-25 minutes until you see the banana leaf charring slightly around the edges.

I serve the parcels individually along with steaming white rice.

Chicken ChaaNp or Chaap-- Mughal influence on Bengal

I wish I could have said this recipe is my Mother's given to her by her great-great-grandfather Wajid Ali Shah's master bawarchi.

I wish I could have said I was born into this recipe. But sorry to disappoint. Many of you have been born into it for sure as you have been with recipes of creme brulee and chocolate gateau. But nope. Not me. Darn, my Ma.

In fact for a large part of my childhood, the chaanp and biriyani, the Mughlai influence on Bengali cuisine eluded me. You see we were probashi bangalis, the clan of Bengalis that live and breathe oxygen outside the state of West Bengal or rather Calcutta. In the town steeped in history that we lived, chaap or chaaNp was not a much known affair. At least wasn't in the years when I was a 8-9 year old. When we ate out, it was largely Naan and chicken curry, dosa and sambhar, even chowmein and chilli chicken. But never a "Chicken ChaaNp".

In our annual pilgrimage to Calcutta, the heart of Bengal, during the winter vacation, the "chaaNp" and "biriyani" should have showed up frequently. But surprisingly it didn't with that much regularity. My maternal grandparents lived in North Calcutta, a more traditional neighborhood where sweet stores like "Kalika Mistanno Bhandar" selling karapak sandesh and mishti doi in earthen pots and small telebhaja stores selling beguni and chop, dotted the streets. Moghlai Parota and fish kabiraji were still to be found, but in those years, restaurants like Rahmania and Aminia had not stretched their franchise hand to the Northern paras with rezalas and nawabi biriyanis.

The Mughlai restaurants like Nizam, Shiraz, Sabir, Aminia and others were all concentrated around Park Circus and Park Street areas where clientele were much more varied and there was a larger Muslim and anglo-Indian population. You must remember I am talking about the fag end of 70s and early 80s here. So we rarely tasted  a"Chicken chaaNp" or a "rezala", those being earmarked for the one day we would traipse down New Market. On all other days of the vacation I was happy to eat Dida's koraishutir kochuri, puffed and filled with sweet paste of sweet green winter peas and a soupy magur maacher jhol and rice.

So you see my childhood memories were not inundated by the rich and exquisite Mughlai cuisine that has seeped into Kolkata's restaurant culture

"The influence was reinforced in the Raj era, when Kolkata became the place of refuge for many prominent exiled Nawabs, especially the family of Tipu Sultan from Mysore and Wajid Ali Shah, the ousted Nawab of Awadh. The exiles brought with them hundreds of cooks and masalchis (spice mixers), and as their royal patronage and wealth diminished, they interspersed into the local population. These highly accomplished cooks came with the knowledge of a very wide range of spices (most notably jafran saffron and mace), the extensive use of ghee as a method of cooking, and special ways of marinating meats. In Bangladesh, this food has over time become the staple food of the populace.
In West Bengal, however, this has remained more than the other categories, the food of professional chefs; the best examples are still available at restaurants. " - Source Wiki

It was only in the early 90's when being in college and traveling more on my own and with friends in Calcutta, that I became familiar with the "chaaNp" or "chaap". This was also the time,  rezala from Sabir's and Biriyani from Shiraz became food that I came to adore. I was smitten by the Mughlai cuisine that Bengal had adapted.

However I did not try to learn to cook it. It was always available and in the 90's pretty easily. Also I rarely cooked then.


The Chicken ChaaNp that I am going to write about today is a recipe that has built itself over days. The base came from a friend, on that I added bits of experience and flavors of my own Garam masala, the idea of charmagaz(melon seeds) and rose water came from Sayantani's post which I adapted and replaced with poppy seed-cashew paste, the lust for it came from Indrani's chicken chaap and Preeoccupied's Kosha Mutton ChaaNp.

Though Mutton Chaap is made with usually ribs, the chicken chaaNp I have had were always made with leg quarters in a thick but not clingy gravy with a fine layer of oil floating on top. The key to the recipe is marinating the meat in a onion-ginger-garlic-garam masala-kewra water paste and then cooking in ghee over slow heat on a pan with a flatter surface. I however have used only very little ghee. The slow cooking anyway releases a lot of oil at the end so I feel the amount I use is fine. You are welcome to use more ghee for a richer version.
The poppy seed-cashew paste gives a thicker texture to the gravy, the kind I remember and the kewra water gives it the Mughlai scent.

The dish actually is pretty easy to make. Do not get intimidated by the Steps under Prep. They are all very simple. So if you are all set for a Nawabi evening go ahead and indulge yourself. Serve this dish with some biriyani but I would say store-bought Naan does most justice to the dish and also cuts your effort in half.



Prep

Make Garam Masala powder according to my recipe. My Garam masala has cardamom, clove, cinnamon, little javetri(mace) and dry red chillies. It is really aromatic and will add more flavor to the dish. We will use about 1 tbsp of this Garam Masala

This is my favorite step.
Instead of chopping onions in fine thin slices ,I will just chop
2 medium sized onion in large chunks. 
Chop, chop done
Now boil the onions till just soft but not mushy
Cool  

Note: I use boiled onion for two reasons. Raw onion paste tends to get bitter at times. It also takes longer to cook raw onion paste. If you want, go ahead and use raw onion paste but remember to cook it for a longer time.

Make ginger-garlic paste with
8 fat clove of garlic
1 heaped tbsp of chopped ginger
splash of water
Almost 2-3 tbsp of ginger-garlic paste in all

In a blender jar add
the boiled onion
1/2 cup of thick hung yogurt/greek yogurt
and make a paste

In a bowl add
the onion + yogurt paste you just made
the ginger-garlic paste 
1/2 tbsp Garam Masala
1 tsp Red Chilli Powder
2 tsp Turmeric powder
few drops of Kewra water

few drops of Rose water
and mix
We will use half of this as marinade and rest half in gravy. So store half of this paste in a separate container to be used later.

In a large-is tray put the washed pieces of chicken.
I had 4 leg pieces. Total weight 2.5lb(~1kg)

Make slit in the chicken pieces and rub with salt and about 1/2 tbsp of Garam Masala powder.

Next add half of the marinade to the chicken pieces and mix well. Leave it overnight for the flavor to seep into the chicken. If not overnight at least 3-4 hours is recommended,

Start Cooking

In a pan with a flat bottom heat
2 tbsp oil
+ 1 tsp ghee
Note: I try to cook most of my food low in oil and ghee and so my oil and ghee proportions are much less than what you might see in other recipes. I am perfectly ok with this as we are not too much into oily food. But if you want to make the dish richer do increase the ghee a little

Temper the oil with a 2" stick of cinnamon and a Tejpata

Now add a tsp of sugar to the oil and brown the oil by swirling the pan.

Next lower the heat and add in the onion-yogurt-ginger-garlic-spices paste you had prepared and stored. Fry this paste for about 5-6 minutes at low medium heat.

Shake off excess marinade from the chicken pieces and add them to the pan. Do not overcrowd them and the pieces should lie side by side. Cook/Fry the chicken pieces till their raw coloring is gone and they have taken on a light yellow coloring. Do not deep fry the chicken and they should not turn brown.

Now add a wet paste of
1 tbsp poppy seeds
+ 1 tbsp cashew

Note: Soak poppy seeds and cashew for 10 mins and then make the paste

Also add the remaining chicken marinade and some salt to taste. Gently mix and cook for 6-8 minutes.

Cover the pan now and at low-medium heat let the chicken cook. Usually the chicken will release water and will get cooked in its own juice. No need to add any extra water. However if it is getting too dry, add little water judiciously. It will take around 30-40 minutes for the chicken to get fully cooked.

Once the chicken is done and a thin layer of oil has surfaced, taste the gravy and adjust for seasonings. At this point if you wish, you can also dry off the gravy a little. Add few more drops of kewra water at this point if you wish.

Serve with Biriyani or Naan. I have seen the gravy and chicken tastes much better when had the next day. So give some time for the flavors to mingle before you serve.

Since I have made the aam kashundi, my week night dinners have gotten easier.

I have been slathering and pouring that kashundi on E.V.E.R.Y.T.H.I.N.G

Palong Shaak Bhaja -- Check

Tilapia -- Check

Chicken -- Check

Alu Seddho -- Check

Salmon -- Check

Bath Water -- Check. Ok, no scratch that. Not bath water but other than that on E.V.E.R.Y.T.H.I.N.G

Last year inspired by Sharmila @KichuKhon and another reader(Mahua Maharana), I had made a Shorshe Roshun Mushroom -- Mushroom in mustard, garlic sauce. It was so good that since then if I ever make mushroom at home it has to be that. The garlic with mustard is the greatest idea on earth. That time I had just used the Cookme Mustard powder and garlic paste and the result had been delicious. You can see the set of pictures on FB here.

Now you can just imagine the level to which the dish was elevated when I used Aam Kashundi.

Awesomness, thy name is Shorse Kasundi Mushroom



Heat Mustard Oil to really hot or as they say in English "smoking". Don't skimp on the oil

Temper the oil with
1/4th tsp of Kalonji/KaloJeera/Nigella seeds
5 slit green chilli

When the spices hiss add the chopped up mushroom. I used a whole big box of button mushrooms.

The mushrooms release a lot of water. A lot. And it is necessary that you dry the water up.

Once the water has almost dried up add
2-3 heaped tbsp of kashundi (aam kashundi)
4 more hot green chillies slit
salt to taste(careful as kashundi has some salt)

Note: If you do not have Kashundi, you can just make mustard paste and mix it with garlic paste. To make Mustard paste --> soak 2 tbsp Mustard Seeds + 2 tsp poppy seeds in water. Drain and then add to the mixie jar. Throw in some green chilies. With splashes of water make a paste

Mix everything together and cook with frequent stirring till the 'rooms are done.

Finish off with slight drizzle of mustard oil.

Busy Day's Egg Masala -- with some tips

If you are a Mother, like me or you are a Father, unlike me, you will appreciate what I am going to tell you about today's egg masala. In fact even if you are not a parent you should certainly appreciate the wisdom imparted in the post.

But if you are a parent, and if you have kids,
and the kids have homework,
and piano,
and taekwondo,
maybe even swimming 
or add some bharatnatyam to the mix
and you are the one who makes sure that all of these get done
and in spite of all this you insist the kids eat a good home-cooked meal at the end of the day
you will really really appreciate a peek into my cheat sheet.

At least I did, when years ago in my noveau blogging days I had landed on the blogs which showed me how to make the "All Purpose Masala". Those had saved my life on many busy evenings. But as it happens one day you are making and freezing masalas like a maniac and then next you are not. I still make ginger-garlic paste and fried onion pastes but for a while I had not frozen these all purpose masalas.

Then when I made this egg masala a few days ago, I did it again. Only I did not have any more ice trays, so I just froze a portion enough for two curries. And did it help me on a busy Wednesday. Phewwww. I saved so much time that if I wanted I could have got a pedicure done. But of course I didn't. The pedicure I mean. Instead I read a book. The Hindi-Bindi Club by Monica Pradhan being one of them and Yes Chef by Marc Samuelson the other.

So what is your cheat sheet ?




Busy Day's Egg Masala

Make the all purpose onion-tomato-ginger-garlic masala


Chop 1 red onion in chunks

Chop 1 tomato in chunks

Peel 4-5 fat cloves of garlic

Peel and chop coarsely 1" knob of ginger

Now we will make an ubiquitous, everyday masala with this.




Heat 1-2 tsp of Olive oil in a frying pan. Add the above chopped onion-tomato etc.. Saute. Sprinkle some salt. Fry the onion tomato till onion is soft and pink, tomato is cooked down and garlic, ginger is softer. You can fry them more till onion is browned etc. but this stage works well too. Now cool the above, put in a blender jar and with only splashes of water make a thick paste.




Ta-Da. This masala paste will serve as your savior in most week days. Use it as a base to make different gravies.

Cook Egg Curry

For the egg curry now boil 4 eggs. Once the eggs are cooked and peeled we will fry them. For this purpose, heat a tsp of oil in the same frying pan. Add about 1/2 tsp turmeric powder. Add the eggs and fry till the skin of the eggs blister and gets a pretty golden brown.

Remove the eggs and keep aside.



Heat some more oil for the gravy. Temper the oil with 1/4 tsp of Cumin seeds and 2 tej-patta

When the spices sizzle, add half of the the onion-tomato-ginger-garlic paste and fry for 2-3 minutes.

Next add
1/2 tsp Kashmiri Mirch
1/2 tsp cumin powder
and 1/4 tsp coriander powder
Fry the masla with a sprinkle of water.

Add a tbsp of Tomato ketchup and cook the masala.

Once you see the oil seeping or that there is no raw smell, add about 1/2 cup of water, salt to taste, little sugar and let the gravy come to a boil.

When the gravy is boiling, check and adjust the seasonings.
Now add about 1/4cup of whole milk and mix well. Lower the heat and let the gravy simmer.
Crush/warm a tsp of Kasoori methi between your palms and add that.

Halve the fried eggs and add them to the gravy.
Also add about 4-6 green chilies cut in halves along their length.
Finish off by garnishing with chopped coriander leaves.

Shorshe Kashundi Murgi -- Chicken in Mustard Sauce



This had been a hectic weekend.

Wrapping up the final touch up for the book; the fonts, the typos, the excitement, the elation and then the depression.

Until Saturday night I was on a high. Half of Saturday night had been spent online, working with my editor in India and chatting more working while she corrected those last little things. I went to sleep around 3:30 AM Sunday morning and by the time I woke up late on Sunday, it was like I had downed several tequila the night before. And this, when I don't drink and have never really experienced a hangover.

If you have had a baby, painted, created music, worked on a project that sapped your soul, written a book, did anything that you loved so much  --- you would understand what I am trying to say. My editor summed it up as "Post partum depression". And she was right. That is what it felt like. There it was, "my baby", the one I nurtured, fed, gave my everything, going out into the big bad world. No longer did I have any control on her fate. She was now left on her own, to chart her own path and be what she wants to be. I will be there to help, standing by the sideline, my heart in my mouth, but my work is done.

I really, truly hope you all will welcome her like your own and be kind. For everything else I will be here.

So anyway to quell the butterflies in my tummy I made a Shorshe Murgi yesterday night. Again. That pungency and hot green chilli will help clear my sentimental sinuses, I thought.

Since I have made the homemade Kasundi, this dish has become easy peasy and I have done it couple of times in just the last few days. My Ma did this with mustard and garlic ground together to a paste with little yogurt. She added some grated coconut if she had some. I, the new BongMom with a can of coconut milk always in her pantry, used that instead. The result was really good and if you know me, I don't brag. Okay, okay, but only sometimes

Now instead of homemade, if you have a bottle of store bought Kasundi , go ahead and use that. The only thing I worry is, that the quality of your Kashundi will control the dish then. If that bottle is not pungent enough, you can make a little shorshe bata(mustard paste) and add that to supplement the bottled kasundi. Whatever you do, go by the taste and smell and you will arrive at your  destination...err at your Shorshe Kashundi Murgi.

So raising a toast to my parents, my daughters, the husband, my friends, you guys and everyone who bore the brunt of my writing, with this " jhanjhalo shorshe murgi". For my excellent editor and her team, I owe you this and more.

Shorshe Kashundi Murgi


Marinate about 3/4-1 lb of chicken in
1 tsp ginger-garlic paste
salt
turmeric powder
1 tsp Mustard oil

Now if you have bottle of Kashundi or you have made Kashundi from my post, USE THAT.
That is the best option.

If you do not have that, which is a shame, make a mustard paste as follows
Soak
1 tbsp Mustard seeds
in a tbsp water for 30 mins

Make a paste of
the mustard
2 fat clove of garlic
1 tbsp yogurt
2 green chilli
salt to taste 
with a splash of water



Heat 2 tbsp Mustard Oil for cooking

Temper the oil with
1/4th tsp of Kalonji
5 slit green chilli

When the kalojeere sputters and the chilli hisses add
2 tsp of ginger-garlic paste 
Note: I add homemade ginger-garlic paste. You can add minced garlic or just garlic paste


Cook for half a minute and add the chicken pieces.
Sprinkle some more turmeric powder.

Saute the chicken pieces till they loose their raw color and turn golden yellow
If the chicken is releasing water , wait till some of the water dries up.
This takes about 10-15 minutes

Next add
3 tbsp of your Kasundi
OR
the mustard paste you made
Note: When using store bough Kasundi depending on its pungency you may have to use more. If it is not hot enough, you need more green chilli too


Mix well and cook for couple more minutes

Add
1/2 cup of thick  Coconut Milk (more if you want more coconut flavor)
1/2 cup Water
salt to taste
5 more slit green chili

Mix well and  then cover and cook till chicken is done. Taste, adjust and reduce the gravy till your desired thickness. Should be on the thicker side. Drizzle few drops of mustard oil to finish.

Serve with steaming white rice. Sniff. Sniff.

Egg Butter Masala or Egg Malai Masala


This Egg Butter Masala was inspired by an Egg Malai Masala a colleague's wife had cooked. Since I did not have her recipe and based this on my Paneer Butter Masala recipe, I decided to call it Egg Butter Masala. The end product looks and tastes very similar to what my Punju colleague had brought.

Now , honestly, I am not a big fan of butter masala kind of gravies. It is ok. I like them but I don't go ga-ga over them. However I have noticed that a large percentage of Indian population and still larger percent of non-Indian population goes absolutely crazy over this dish. My girls also love it. I guess it satisfies different palates and tastes. And for this reason, I have found that a dish like this helps a lot in a party or a potluck where you are not very sure of the food choices of the other person. This one is sure to please.

As you can well guess, I made this for a potluck at work. The recipe is almost same as my Paneer Butter Masala but this one is easier and more creamier. In the other one, I did not use cream. Instead I added cashew paste and evaporated milk. For this one, I thought, "What the heck ? If those people are going to eat 2 more tsp of butter or cream it is not going to harm anyone. Also my life will become simpler". With that thought I skipped the cashew paste and added about 1/2 pt of light cream. I also had to make it borderline spicy and could not use as much Kashmiri Mirch I wanted to. So to get some color I added tomato ketchup taking cue from Nag's blog.

The end result was very good and definitely easy to make. I cooked the gravy a day ahead. You can do it even a week before and freeze, only in that case, don't add the cream until you are ready to heat and serve it. To make it a malai masala substitute water with milk while making the gravy. I added eggs but really you can add anything to it. Both my girls loved it and you can sneak in veggie puree into it if that is your goal.



And for all those who have been asking about the book, we are now at the stage where my erudite editor is on her final edits and I am making small changes here and there. The book cover has been decided on and we have got some sketches to be included. The book is not a cookbook and intertwining the recipes and narrative has been both fun and hard work.Also with a work outside home, kids and the blog, I have been missing the deadlines set by my editor quiet often which means the book gets delayed just that much. Hope you all appreciate once it is out and anyone with a single negative comment about it will get a time out. Serious.

Egg Butter Masala

First let us make the gravy

Fry one red onion chopped in large chunks till soft. Cook and make a paste. You can also use raw onion paste but it sometimes tends to get bitter and also takes longer to cook so I like it this way.

Heat 1tbsp butter + 1 tbsp oil

Temper the hot oil with 1/4tsp of methi seeds and whole black cardamom lightly bruised

When you get beautiful flavor of methi, which is really really fragrant, add the onions paste. Fry for about 2 minutes

Next add
1 tsp ginger paste
1 tsp garlic paste
1 tsp Kashmiri mirch(more to taste)
a sprinkle of turmeric powder
Saute for couple more minutes

Now add about 3/4th cup of pureed tomato. I used canned whole tomatoes to make the puree, good juicy fresh ones will work well. You can also use tomato paste but in that case you will be using only 2 tbsp of it.
Add 2tbsp tomato ketchup

Fry till the raw smell of tomato is gone. This takes about 6-8 minutes, at end of which you will see oil separating from the edges

Now add about 1 tbsp of Kasoori Methi warmed between your palms
Add salt and 1/4th-1/2 tsp of Garam Masala.
Add about 1/2 tsp of sugar
Mix well

Add 1 cup of warm water and let the gravy simmer and come to a boil. For a richer version add milk instead of water. At this point taste and adjust for seasonings. Add more Kashmiri mirch or salt or sugar depending on your taste. Simmer till gravy is the right consistency for you, remember you are going to add cream to this.

When you are happy with the simmering gravy, lower the heat and add 1/2pt of light cream. Yes lot of cream but you alone are not going to eat it. At low heat let the gravy simmer for 4-5 mins.

You have the Butter Masala gravy ready.

Now add the Eggs

While you are making the gravy boil about 6-7 eggs. Cool and peel shells. Now you can fry them with a sprinkle of turmeric to a golden brown or just let them remain the way they are. To serve, halve the eggs, sprinkle with little salt and add to the gravy. Simmer for a few seconds. Serve warm.

Thai Fish wrapped in Banana Leaves -- not a drop of oil

The last week of December saw a lot of friends in our home. Perfect time. Cold winters warmed by warmer friends. The house has slowly started feeling home as we share meals and swap stories. By the time I get around hosting all my dear friends I hope the house will feel like the old one and "more fun" as LS is wont to say. "Not saying that I don't like this house but the 123 AnyDrive was more fun", she declares.

Now this holiday season. there were friends we don't see that often and when we meet the first words that spill out are about the kids who have grown taller, shorter, bigger, lost teeth etc. There were also few friends whom we see more often and who see the kids at more close quarter to be astounded.



Now irrespective of who they are, I have noticed a repetitive trend in my nature in the days and even hours leading up to their visit. The same can be said of the husband-man. Only his ways of dealing with it is exact opposite of mine.

The husband-man believes in welcoming friends in his unshaven, PJ'ed best. Not only that, he thinks it is perfectly fine to have stacks of unpaid bills/papers/unnecessary stuff on the counter when friends are visiting. If the cleaning-lady has come in on a Thursday he refuses to understand the importance of scrubbing a sink just before the guests arrive on a cold Saturday.

"These are friends", he yells, "Friends I have known since XYZ, Kolkata, Bangalore, Honolulu, New Jersey (fill place of choice)".

"Ok, but how does that justify a dirty sink", I retort.

"It is NOT dirty. IT IS clean", he desperately points out.

"Agreed. It IS clean. But it is NOT cleaned 'before-guests-arrive-clean'. There needs to be scented candles on the bath counter and not a tube of hemorrhoid ointment," I counter.

"These are not guests. These are friends," he rolls his eyes, flaps his arms, behaves weird.

Given that the guy is pretty tidy and neat in his ways, it is beyond me how he does not get this. Sigh!! And it is only fair that I mention, surprisingly he is the one who does the major clean up and dish washing after the friends leave.

But after all these years he does not understand why on the morning  of a house guest or even dinner guest's arrival, I shove everything junk visible around the house, in the closet ,and close it tight. Then I prop pillows and screech at the girls if they dare to nudge even one out of its defined space. I take out  books which I last read about five years ago and then strategically place them on the side table (this has a good side effect as I then start re-reading forgotten books). I light candles, scrub the kitchen counter thrice and align the rug in family room every 3 minutes. If time permits I also take out the huge conch, Ma got from Andaman and which is stored away in the upper shelf of the entertainment center for safety, and place it on the console. Ta-Da.

I don't have fancy place settings and how I wish I could do that too.

"Ha, ha...if only they open your closet", the husband-man laughs deliriously watching me from the corner couch. I fear he might actually just ask them to do so.




"Ok enough. Remember to talk", I hiss.

No, no I am not insane and neither is the husband-man undergoing speech therapy. It is just that he believes that it is perfectly fine to make visiting guests watch "Myth Busters" or "NatGeo" in silent admiration or even  take a nap when friends come a visiting. While I am forever trying to think of the most exciting story to keep them entertained, he always volunteers to put LS to bed (which is a kind thing to do)  and only after an hour do we realize that he is the one who is actually snoring. "Ghumiye poreche," I tell the friends calmly and then wake him up and drag him down to participate in the late night adda.

"Gawd, they are my friends. NOT guests", he rolls his eyes exasperatedly. No one seems to mind really so he must have a point there.

And then he believes in serving solid robust food like pathar mangshor jhol, bhaat and boutique beer.

"Thai fish in Kola pata, all wussy-ussy fancy-pansy. I am not doing it" he declares. I plain ignore. If I have managed to get banana leaf from the Asian Store, and a recipe of a fragrant marinade off the internet, my guests better eat the Thai fish.

And they do. They do. No one even opens the closet.


This Thai Fish in Banana leaf is a new found recipe which I love. It started off with a recipe suggested by a friend  here. To it I merged a recipe of Green Curry sauce I found from Jamie Oliver. The two recipes punched together made a beautiful green curry paste. From then on making the fish was a breeze. It was so simple that it worked well for a weeknight dinner and even when cooking for more guests. The green curry paste can be made a day ahead but I felt it lost a bit of punch on Day 3. Maybe freezing instead of refrigerating for longer use will work well.

A note of caution while making the paste, lightly fry the onion before adding to the blender. This will avoid the bitterness many times grinding onion brings around. Also I added the lime leaves later and not while making the paste. The first time that I ground the leaves along with other spices in the mixer, the paste had a faint bitter taste. So I snipped the lime leaves with a scissor and then added to the fish while marinating. This way the paste was fragrant and perfect.

I was lucky to get banana leaves in the frozen section of the Asian Market. If you don't, just use parchment or aluminum foil. I have done that too. If you have no access to galangal or fish sauce, I suggest don't get shy, still do the fish but substitute with ginger and soy sauce

Also I tried this dish with three kind of fish -- Salmon, Tilapia and a fish called Swai. It worked best with Swai and Tilapia which are very mild fish and absorbed the flavor of the marinade.



The fish - I used 3 fillet of swai, each fillet cut in 3 pieces

In a blender jar add the following
1 onion, peeled and chopped (saute onion and use if onion tends to get bitter on grinding)
2 fat cloves garlic
1 thumb-size piece galangal, peeled and chopped
1 tbsp coriander powder
handful of Thai Basil leaves
2 tbsp fish sauce
1 tsp Soy Sauce
2-4 fresh hot red Chilli
handful of fresh coriander leaves
2 tbsp Coconut Milk (the thick part)
juice of 1/2 lime
Make a smooth paste


Clean and place the fish pieces in a large bowl. Sprinkle salt. Put the marinade on the fish so that all the pieces are coated nicely with it. If you have extra marinade freeze for later use. Snip 4 small Kaffir lime leaves in small pieces and add to the marinated fish. In absence of lime lives use lime zest. Marinate fish for 30 mins.

Next take a square piece of banana leaf.

Put a fish piece in the center. Add some finely chopped chilli rounds. More lime leaf if you have plenty.

Fold the longer ends of the leaf over the fish. Then fold the shorter ends to form a packet.

Secure the packet with a toothpick.

Put the fish packets in a oven safe tray with the toothpick side down. Bake the fish at 350F for 20-25 mins. At the end of this, open the covering and check to see if fish is cooked through.

Serve with white rice accompanied with one more Thai curry like this one.

Chingri Dhan-Dhana-Dhan -- Pudina Dhaniya Shrimp


Once upon a  time, years ago I used to make a chicken dish with coriander and call it Chicken Dhan Dhana Dhan. At that point I did not know much about cooking. The fact that oil separates from masala at some point of kashano was news to me. Instead I tried to shroud my insipid dishes under dazzling names. That the dishes were flop B-grade movies even with names like "Lal Badshah" was often forgotten amidst laughter over the names. Or people were polite and did not point out the fact blatantly.

Now when I think of Chicken Dhan-dhana-dhan, I have no recollection except for the name. It was green and had dhonepata but it was very different from my Dhonepata Chicken. But the name has stuck in the folds of my memory. Quirky names do that to me. I still remember the name a friend (with a penchant for coining funny names) from college had chosen for a prospective Bollywood movie. "Muhabbat ki Jhopri me Jhaarpit ki Raat" was her name for a Bolly blockbuster. Every time I think of that name, my lips curl up in a smile and I chuckle to myself.

In every stage of life I guess there are names you find to laugh on. For my four year old, freshly introduced to potty humour, it is stuff like "Butt-er" or "Pippi" or even "Green Pea".  For another friend it is "Gopi", and since he has drilled into my brain I cannot address a "Gopi" with straight face anymore.

Same is with strange, quirky food names. If the food and hence the name is unfamiliar territory it can be source of much entertainment. Like say "Bibimbap". When I hear "Bibimbap" all I can think of it as, is Raavana's 6th wife with a flared nostril and thick gold nose ring on it. "Kimchi" brings to mind a lot of tiny twittering school girls. "Chenchda" comes alive as a young boy in narrow trousers with long sideburns and hippi haircut

Yesterday on Facebook, I asked for dishes with weird, quirky nonsensical names. Needless to say I had a hilarious time reading what the commenters had to say. There were "Faggots" (a kind of meatball), "Dhop er Chop" (the real deal), "Spotted Dick", "Country Captain", "Baykla Bhajja", "Elo-jhelo", "Round Round Stop", "Moo Goo Gai Pan"  and "Gambas pil pil". The name that stole the show for me was "Jil Jil Jigarthanda". I cannot wait for an opportunity to order it with a perfectly serious look. To say "Ek Ji Jil Jigarthanda dena" is a privilege I want to earn. With names like this I am sure the fish and chips eating Bard would never have dared to say "What is in a Name?". A lot of fun if you ask me.



Now back to today's dish which was built on the memory of the now lost "Chicken Dhan-Dhana-Dhan". It was also inspired by the "Pudina Dhaniya Chicken" and "Pepper Shrimp". The pepper in hot oil and also in the paste adds a very nice flavor layered on mint and cilantro. Chingri Dhan-Dhana-Dhan needs to be pronounced with the right inflection, a slight pause after the first "Dhan" and then "Dhana-Dhan" together with more speed. That is how you will get the right effect .With fresh coriander, green mint, and black peppercorns it will also  a deadly combo, truly a dhan-dhana-dhan.

Chingri Dhan Dhana Dhan

Prep

Add the following to the blender jar and make a smooth paste
Coriander Leaves -- 1 cup chopped
Mint leaves -- 1/2 cup chopped (If you don't have fresh, use the dried mint but use less of it)
Yogurt - 1/2 cup of thick yogurt
Garlic -- 4 fat clove
Ginger -- 1" peeled and chopped
Hot Indian green chilli -- 2
Whole Black Peppercorns -- 1 tbsp
This greenish paste can be stored for future use and as base for many other curries. But don't use it as paint.



Lightly fry a small onion till it is soft and pink. Remove, cool and make a paste.

Clean and de-vein shrimp or defrost if using frozen ones. Toss them with salt and let sit for 15-20 minutes. I had about 22 medium sized shrimps(not jumbo but the 20-25/lb frozen kind).

Start Cooking

Heat 2 tbsp Oil in a fry pan

Now to the oil add
1 tbsp ginger-garlic paste (more garlic than ginger)
1 tbsp fresh black pepper powder

When you get the nice aroma add
3 tbsp of the onion paste

Cook till oil separates. Now add the green masala paste. Add salt to taste, a tsp of sugar. Cook the masala paste till there is no raw smell. Now add little water(about 1/2 cup for gravy) and let the gravy simmer to a boil.

Adjust for salt and sugar at this point. Add juice of a quarter lime and a sprinkle of rock salt(beet noon) to add to the flavor.

Once you think gravy is almost ready add the shrimp and toss with the masala. The shrimp will cook fast and you are done as soon as the shrimp starts loses its raw coloring and looks white and orange. Do not cook the shrimp longer than necessary. The gravy will not be totally dry but will be clinging to the shrimps.

Serve with a pulao or rice.

Doi Dharosh -- Okra in a spiced yogurt sauce

The Bengali Doi Dharosh is mine and my Mom's take on the Dahi Bhindi. In this dish, the gravy is a light yogurt based gravy just like in Doi Maach. Spiced with only whole garam masala and a touch of Garam masala powder it is a delicious dish

Before I wrote this post, I thought twice. Actually several times. Was it okay to start the New Year with something like "Dhyarosh" ? "Dhyarosh", "Bhindi". "Ladies Finger" and now "Okra". After all when a Bengali twists her mouth and utters "Dhyarosh Kothakar",  she is not exactly praising the person she is addressing. It is neither a term of endearment nor of highest praise. She is not really saying that the person is green and slender and really tasty when fried. Instead it is rather a term of disapproval, of disdain and contempt, of  labeling a person as lazy, clumsy and even a nincompoop. Now you know that why I was in two minds to start the first post of new year with "Dharosh".

But then I stood my ground and decided my love for Dhyarosh has not been visible around this blog much so this year that vegetable will get its place of honor. It will sing the opening song...Do-Re-Mi.... I will write paeans about it, maybe a novel, an epic. I have always loved the Dhyarosh in all its slimy-ness and never once thought that the texture was a deterrent to anything. I have loved eaiting it steamed with drizzle of mustard oil mixed wth rice in a dharosh sheddho. I have loved it fried with a squeeze of lime juice in a kurkure bhindi bhaja. I have loved it in a dharosh posto, in dharosh shorshe, in a bhindi masala in a kadhi.



But inspite of all that love I have not been able to cook dharosh that often. Mostly that has been due to issues dealing with buying okra.Until a few years back we did not get very fresh bhindi here and the ones that were available looked so tired that you wouldn't even call them Dharosh. The other issue was the board put out around the Bhindi corner. Its ays "Do not snap" and there is always at least 3 persons standing around doing exactly the same. It is hard to elbow them out and then grab a few of the remaining good bhindis. So I mostly  stayed away.



Since last year however the Indian grocery store I frequent has had reasonably good bhindis, this also meant there wasn't much paparazzi around it. I have been trying to get this veggie home more often. Now the hurdle I face is the kids who do not like its texture and refuse to eat it. I hope that will change some day too and we can be a "Dharosh family" with pride.

Easy Tomato Soup with chunks of bread


The days have become real cold here. There are some beautiful warmer days scattered in between but mostly it is cold. My Mother says this winter in Kolkata is unusually cold too. But I am sure it is nothing like here. There, the cold has a distinct fragrance. If trapped in a bottle and named "Le Winter" it would smell like wood smoke, laced with sweet nolen gur, spiked with a hint of citrus-y komla-lebu, all layered on an undertone of napthalene scented kashmiri shawls.

Okay, you might also bring in smog but I like to think that the winters I spent in my Dida's house years ago almost always smelt like this. Also of slightly burn toast with orange marmalade.



Here, it just smells clean and crisp and not cold at all if you are indoors on a sunny winter day. But then you slide open the glass door to the backyard an inch and through the fine wire mesh comes the cold, brutal and sharp. But we have gotten used to it. Except for the gloomy cold days, which I dread, we kind of like the sunny wintry days. It is always about the sun , isn't it ? We get by, neither fearing winter as much as I did earlier nor looking forward to snow with as much excitement as my first  time.

Of course the kids bicker about wearing jackets and boots and ear muffs and zipping the jacket all the way and other such clothing issues, I bicker about cold tiled floors and not having enough drapes for the windows yet, the husband bickers about my need to rush outside or rather make him rush outside for all kinds of groceries at odd hours.


"Why do you need vine ripened tomatoes at 8 in the evening ?", he asks.

As if, there is a time for such things.
As if the need for firm, ripe on the vine tomatoes arises after consulting the Ponjika for the right muhurtam.
As if just because tomato soup was never my thing, I can't crave a bowl of warm tomato soup now.
As if just because the only tomato soup I would ever have was the creamy deliciousness at Nagarjuna in Banglaore and whose recipe I do not know, I can never try to make another one.
As if, if a recipe is easy and can translate to quick dinner I will let that opportunity pass. 

Do I look like a fool ?

But this day I had only one tomato in my refrigerator and half a can of Hunt's Diced tomatoes. And I craved a tomato soup, a hot (as in the temperature) one. Of course no sympathetic soul was venturing to get me vine ripened tomatoes shipped from Florida and currently in residence at the neighborhood grocery store.  So when I saw this tomato soup, I took the plunge. And good I did, and good I had the canned version too, for this soup with a Michelin tire tomato would have not tasted half as good. Too many "good" there but that is how this soup is. The bread makes it special.



And surprisingly both the girls ate it with much eagerness. Either they were very hungry for it was a school day or this soup was good. I am sure they will refuse to eat it by the fourth time or the fifth. I can't stretch my luck. But hopefully by then I will move on to another soup.


Tomato Soup with chunks of Bread

Heat some Olive oil in a deep, heavy bottomed pot.

Add 2 cloves of garlic minced  and a medium sized onion finely chopped.

Saute till the onion has turned soft and pink. I also added a carrot peeled and cubed to add some sweetness to the soup but it is not in the original recipe.


Now add the tomato. I added 1 medium sized tomato chopped and about 3-4 cups of diced tomatoes from a can. Note: In an alternate version you can cut plump, juicy tomatoes in half, dust them with salt, drizzle with olive oil and bake for 30 minutes in the oven for 350F. I throw in some cloves of garlic along with the tomatoes. Yellow and Red sweet peppers are another great choice.

Sprinkle salt to taste, a little paprika, 1/2 tsp of brown sugar and mix. I also added a bit of cajun seasoning which I happened to have.

Now let the tomatoes cook at a low medium heat. Stir in between and wait for the raw smell to just go evaporate.

Next add a cup of water and about 1/2cup of milk and stir to mix everything. With an immersion blender, blend the soup. Let the soup simmer to a boil. Taste at this point and adjust for seasoning.

Meanwhile, cut chunks of bread, douse them with olive oil and throw them in the toaster oven to toast. Lightly toasted is what you want, not crisp like croutons.

While serving ladle the soup out in a bowl, add grated parmesan and toss in the chunks of toasted bread. Sprinkle salt and pepper to taste and eat it to warm your chilled bones.



Pressure Cooker Version: Updated on March,16th, 2017

Heat some Olive oil in a pressure cooker.

Add 2 cloves of garlic minced  and a medium sized onion finely chopped.

Saute till the onion has turned soft and pink. I also added a carrot peeled and cubed to add some sweetness to the soup but it is not necessary.

Now add the tomato. I added 1 medium sized tomato chopped and about 3-4 cups of diced organic tomatoes from a can. NoteIn an alternate version you can cut plump, juicy tomatoes in half, dust them with salt, drizzle with olive oil and bake for 30 minutes in the oven for 350F. I throw in some cloves of garlic along with the tomatoes. Yellow and Red sweet peppers are another great choice.

Sprinkle salt to taste, a little paprika, 1/2 tsp of brown sugar and mix. I also added a bit of cajun seasoning (optional) which I happened to have.

Saute for a couple of minutes for the raw smell to just go evaporate.

Next add 2-3 cups of organic vegetable stock, salt to taste and close the lid of the pressure cooker. If you don't have stock, go with water.
Cook until -- In a whistling pressure cooker, 3 whistles and in the other kind, 3 mins after full steam.

Once it cools and you can open the pressure cooker lid, with an immersion blender, blend the soup.

Taste at this point and adjust for seasoning. Add 1/2 Cup of milk and let the soup simmer for 2 more minutes.

Meanwhile, cut chunks of bread, douse them with olive oil and throw them in the toaster oven to toast. Lightly toasted is what you want, not crisp like croutons.

Sunday Night Kitchen Post



It has been almost two months since we left our old kitchen and moved into the current one and slowly I am settling into its ways. I still get confused that the cutlery drawer is not to my right when I am making tea but on the left. On the right is the spice drawer which I keep opening absent minded looking for the odd spoon.

Also the sink faucet is the exact opposite of the standard for hot and cold. We can change it but haven't yet and once in a while I am thrown off by the left which is cold while right is hot ! This has helped me get further confused when I am visiting friend's where the faucet has the standard setting. So officially my brain is addled with which is which and now I can never trust myself to open a faucet and get water at the temperature I want.



But there are things I love about this new kitchen. The first is of course the sun, the sun which this side of the house gets in plenty, all through the day. Next is the lazy susan in the corner cabinet.I have always loved that arrangement in other homes and I really like it filled with all my spices.Also the fact that now I have an ample pantry right in the kitchen is a big bonus.


The kitchen as always is not entirely mine and shared by everyone. The girls do their homework and painting/coloring on the kitchen island all the time. I had this blank wall which I thought I would set up as a display of the girls' art work. Whatever picture they draw can be put into those frames and we can have fresh new art on the wall every week almost.Don't you think that is a great idea ? I am planning to do the same for their bedroom too. Earlier I had a cork board and the refrigerator was the major place for all art display. But the framing fills my walls and so serves double purpose.



As we put in our own touches and cook more I will post more pictures and I am sure you will grow to love this kitchen as will I.
