Green Beans Bhorta -- paste or pâte

A few years back I did not know about a "Bhorta" with an "O".
The only kind I knew was "Bharta" with an "A" and that began and ended with "Baingan Bharta".

And then came LS's babysitter from Bangladesh and we kept hearing a lot of "Bhorta". However we didn't get to eat many except "Aloo Bhorta" which is almost like "Alu-Sheddho" and a "Alu-Sheem Bhorta" which again is almost like a sheem bhaate. LS's babysitter is not too interested in cooking and so that is that.

But at least now we were more aware and didn't say "Baingan" when someone said "Bhorta". Bhorta is a dish where veggies, fish or even meat are mashed and spiced. It is the signature of Bangladeshi Cuisine holding a place above any other food in their culinary culture. Amazingly, it has not trickled into mainstream Bengali food in neighboring India and most Bengalis from India are unaware of the myriad of bhortas that Bangladesh boasts of.

Then last year came the husband's sis, the sis-in-law, a very enterprising and good cook. And guess what, she befriended a neighbor who was from Bangladesh and a storehouse of all kind of "Bhorta". My sis-in-law did not waste time and honed her skills on numerous "Bhortas" and when she visited us last year, she brought along a tupperware full of greenish hued "Bean Bhorta".

Now I am not too fond of "String Beans" or "French Beans" and usually avert my eyes and look the other way towards the mint and the coriander when I am confronted by them. But this was different. This was "Whoa" good. Very good in total un-beanly way. I mean if you are a green bean fan you might not like the idea of pulverizing the whole thing into bean debris but believe me even then you are going to like it.

My sis-in-law adds chingri bata or roughly ground shrimp to this. I wanted a veggie version and she suggested grated coconut. So I used the frozen grated coconut of course.

This is a rough recipe with the measures eyeballed. Go with your instinct. LS's babysitter said "Bhorta" should be green chili hot and so we added a good quantity of green chili. Frankly it was too hot for me. But the way you eat it , mixing a small portion of bhorta with white rice attenuates the heat and makes it pleasantly bearable.

In that sense, a little bhorta goes a long way.

Wash and chop French Beans in 2" length.

Heat Mustard Oil in a kadhai and fry 1 small onion thinly sliced.

Follow with 5-6 clove of garlic chopped and 4-5 hot Indian green chili.

Next add the beans, around 4 cups of the chopped ones. Add salt to taste.

Saute the beans for 4-5 minutes.Add little water, cover and cook it is soft and done.

Once it has cooled down put the contents of the kadhai(beans+everything else) in a blender jar and add about 1/4th cup of grated coconut. With a splash of water make a thick paste.

You need to dry up this paste now. 
So heat a teeny bit of Mustard Oil. Temper the oil with 1/2 tsp of Kalonji and 4 green chilies. Now add the west paste. Saute until you have dried up the excess water and the result is a moist paste.

Add some finely chopped fresh coriander leaves and serve hot with fluffed up white rice. To eat with your fingers, mix little dollops of paste with rice and enjoy.

The Non-Veg version

For the non--veg version, you have to get some small to medium sized shrimp. The frozen ones work best as you will be making a paste out of them shrimps.

Wash and clean shrimp(or just defrost). Then toss with little salt and pinch of turmeric powder.

Heat some oil in a frying pan and fry the shrimp until it is soft and golden. When it has cooled down, put the shrimp in the blender along with the beans and make a paste.

To dry out the paste again follow the same step as earlier

The second is , BS's summer vacation starts today and it goes on for 2 and half months. As a summer project for BS we decided to blog about the books she is going to read over the next two months. Every week she gets to pick 3-4 books of her choice while I pick 1 or 2 for her. Of these the ones that she really likes will be blogged about. Some books that LS likes might find its way there too. It is going to be a simple blog with no heavy review but just a way to list books she will read and hopefully love over summer. Also there will be some kid-friendly snacks that BS can make by herself. For this we have had great suggestions on Facebook and hopefully many of them will be done.

It will be nice to have you over there at Bong Mom's CookBook for Kids, with your suggestions and if your kid is starting summer vacation why don't you start a similar blog for them too ?

My Mother's Bhaja Masla

Every Monday, ok most, I wake up all anew, striving to be a "Good" Mother. Not "Very Good". Not Excellent. And definitely "Not Bad". Just plain, simple "good" Like I have all along wanted to be. Good girl, good student, good whatever...an uncanny desire for goodness.

Only this time it is harder than most. How do I decide how much I need to nag for Piano Practice without it falling into the category called "pushing" ? How can I make sure that I am mentally stimulating without "helicoptering"? How do I ascertain that my exasperation when a long division is messed up is not going to cause some negative setback in late fifties of my offspring ? How do I teach to be competitive without being aggressive ?What are the fine lines ? Darn there are so many that I wish someone would have highlighted them with a fluorescent marker. And then comes real incidents like this only miles away from home and I wonder what went wrong with both the kids ? The Mothers must have stayed up nights, fed vegetables, told stories, ferried to a violin class or spent hours by the hot pool. The Fathers must have done whatever he did. The schools were excellent, the Teachers good. And yet.

No wonder by Thursday or even Wednesday I want to hand over the remote, a bag of chips and say "Que sera, sera".

In spite of this it is a fun ride. An exciting one. I would not say I learn as the years of my parenting grows  because I am not sure of that. The only thing I realize is no two child are same and there is not set rule that applies to all.

Now many a Mondays when I am striving hard, I usually go on Amazon and order books for the girls. On these days I deviate from the standard fiction series that is bought otherwise. Recently I bought three books which I found so wonderful that I thought I would share with other Moms here.

The first one "Children Just Like Me" was suggested by the wonderful blog of Choxbox who sadly does not blog anymore. This is a beautiful book with gorgeous pictures about children all over the world and how they live, eat, go to school etc. Very engaging way to learn about the different cultures. The second one "Feel the Force" is a popup book explaining basic Physics stuff like gravity, friction, force, pressure etc. It is much fun and an excellent review is here. BTW, the Mom who writes that blog is very inspiring. I love her reviews and am totally awed by the activities she does with her kids. The third book "Bedtime Bugs" is a popup book for younger kids. This one I had to buy forced by Little A and it really was a good thing. If your child loves to pull tabs and pop-ups they will love this one..

Back to regular programming, lets talk food now. Today though it is just spices without which food wouldn't be what it is. Bhaja Masla or Roasted Masala is a unique Bengali spice blend. What makes it furthermore unique is that there are several kinds of it. Some I know of. Some I have heard of. Some I have no clue about.

Bhaja Masla 1 -- Dry roast cumin seeds and Dry Red chili. Cool and grind to a powder. Used in Alu Kabli

Bhaja Masla 2 -- Dry roast Paanch Phoron and Dry Red Chili. Cool and grind to powder. I use it on chutneys.

And then there is my Mother's Bhaja Masla. Her staple in her pantry. My home roasts with this flavor during her visits. Strong, Robust, Smoky--- this masala speaks of mystery and adventure and dark chambers with hidden specters. My Ma uses it to sprinkle on chutneys, to make vegetable chops, to use in lieu of Garam Masala and to revel in it. She also makes a fabulous niramish alur dom with it which will come up next.



The spices for Bhaja Masla


Cumin Seeds -- 2 tsp
Corriander Seeds -- 2 tsp
Fennel Seeds -- 2 tsp
Cardamom -- 6
Clove -- 8
Whole black Peppercorn -- 1 tsp (Use 3-4 Dry red chilies instead if you wish)
Tej Patta - 1 small
Dalchini -- a thin 1" stick

Roast for 8-10 minutes at very low heat till you get a strong spice smell. Cool and grind to a fine powder.

This measure makes a large amount of powder which can be stored for later use. You can make smaller amounts by using quarter of the measure.

Methi Begun -- the way my Ma makes it

My Mother's forte is the simple unassuming everyday Bengali meal which she cooks everyday. Even if there is two vegetables, a dal, a fish curry; all in their cold corning ware whites stacked up in the refrigerator, she cooks. I shout at her asking her to stay away from the kitchen, to relax; but at the end of the day, there is always a pyrex bowl resting on the counter, still warm and smelling better than Dior. And it doesn't even contain goat cheese. Or heavy cream. Or even a hint of saffron.

It is just a plain pyrex bowl with everyday Bengali food with a simple name that actually lists the vegetables in the dish instead of sounding like a bath product from the nawab's harem. Methi-Begun, Alu-Fulkopi, Bandhakopir tarakari, is how it goes instead of the glamorous Dal Maharani or Shahi Paneer or Chicken Nahanewali. Not that there is anything wrong with glamor or those names. It is just not what my Mother makes.

Now since all the food is cooked by the time I reach home and I have no intention to inquire after them or photograph them in dim CFL light, I never get around to writing about them. But my friend N (who has only recently got to know about the blog and so has taken over) insisted that I have pictures of my Ma doing the cooking and thus let the people know who is in actual charge of my kitchen. "Purdah Uthao", kind of thing you know.

So I said "okie-dokie" and strategically posed camera while my Mother cooked. I kept saying "Repeat, repeat" but she did not listen. She did not even want to place hand strategically over the kadhai with a spoon or something. Ultimately there are no good shots. But there is a very good Methi Begun-- fenugreek greens cooked with eggplant. And my Mother made it. And that is all that matters.

My Mother plucks Methi leaves, then chops them, saving the stems to be put into Dal. Me ? I go snip-snip with scissors. No wonder her Methi Begun tastes better.

Heat Oil. Temper with slit green chilies and kalonji aka Nigella seeds

Add about 3 cups of cubed eggplants and saute till it softens. My Mother covers and lets the eggplants cook, removing the cover in between and stirring till eggplant is soft.

Next is the Methi's turn. Add about 3 cups of loosely packed methi greens.

Methi, Methi, fresh methi. What aroma. In between here add the salt too.

Cook till Methi greens wilt, eggplants soften and they both cuddle in harmony.

From a FB discussion there were new ideas about tempering the oil with methi seeds for a more intense flavor. I will try this next time.

Begun Chingri - Eggplant cooked in Shrimp Paste

This is not  a traditional recipe, more of a delicious innovation, where eggplant is cooked with shrimp paste. It has the goodness of fried eggplant or Begun Bhaja elevated to soaring heights with some fresh shrimp paste. If anyone happens to copy this and pass it off as their Grandmother's recipe, less power to you!


This is my Sister-in-law's recipe.

Actually her innovation. She invented this thing. Including the nomenclature. Called it "Begun Bahar" (or was it "Begum Bahar").

Then she sent me an e-mail. This is what her mail read. Ditto.

"Bengan Bahaar (amaar deo naam )


Fry shrimp with salt and haldi keep it aside.Fry the begun as we do begun bhaja and keep aside.


Grind cut onion ginger garlic and tomato fry them with haldi mirchi and little dhania and jeera powder.
then grind the shrimp and the fried masala with sarso /methi seeds . Sprinle salt and saute the whole thing with the begun bhaja for sometime till the colour changes to deep red /orange and nice smell comes out. Garnish with coriander and squeeze lemon juice on top before removing.
I am sure you guys will love this . I feel really nice to "invent" a new dish hehehehee "

I have full faith in her and so I got two eggplants from the Farmers Market. One of them was destined to be turned into exotic "Begun Bahar" with sequined zari ghungat and kohl lined eyes. Reminds me of Meena Kumari but really this was just eggplant, whatever you might call it.

The dish turned out to be truly, really lovely. The freshly ground shrimp paste does wonderful things if you do not know. The silky, fleshy eggplant is beautifully complemented with the shrimp paste. I am eating the leftovers for lunch right now and OMG I think you should totally make it.

Shoo now....get moving. Get that darn eggplant, man. And oh yeah, I called it Begun Chingri, stick with Baingan Bahar if you must though.

Begun Chingri -- Eggplant cooked in shrimp paste


What You Need

Eggplant/Begun -- 1 medium sized or 2 slender Japanese Eggplant

Onion -- 1 Cups of chopped onion
Garlic paste -- 1 tsp (or 6 Cloves of Garlic)
Ginger Paste -- 1 tsp (or 1" of  Ginger chopped)

Tomato -- 1 medium chopped small
Green Chili(hot Indian ones) -- 4-6

Cumin Powder -- 1 tsp
Coriander Powder -- 1 tsp

Kashmiri Mirch -- 1 tsp
Turmeric powder - 1 tsp

Mustard Seeds -- 1/2 tsp
Methi Seeds -- 1/2 tsp

Shrimp -- 12-15 medium sized shrimp, peeled and deveined

Corriander -- fresh chopped about a fistful
Lime Juice -- 1 tsp


How I Did It

Chop eggplant in 3"x1" thin slices. Soak in salt water for 20-30 minutes. Drain water and sprinkle the eggplants with salt and a tsp of Turmeric powder.

Fry the eggplants. How you fry the eggplant is kind of up to you. Ideally it should be fried in enough oil. If you are a health freak like me, you will pan fry them. If you are a more serious freak, you might brush them with oil and bake/broil them. Whatever you want to do, do it. Then remove and keep the fried eggplants aside.

Lightly saute the shrimps with salt and turmeric powder. Remove and keep aside.

Fry the onions till golden brown. Add to it
Garlic
Ginger
1tsp Cumin Powder
1 tsp Coriander Powder
1 tsp of Red Chili Powder
Saute for a minute

Next add
1 medium tomato finely chopped
+ 4 green chili
Fry till tomato is all mushed up. Cool and make a paste of this masala (onion+tomato+ everything else).

Make a coarse paste of the sauteed shrimp. Remove and keep aside.

Heat some more oil in the fry pan. Temper the oil with
1/2 tsp of Mustard seeds
+ 1/4 tsp of Methi seeds

When the spices start sputtering and getting fragrant add the onion+tomato masala paste. Saute the masala till you see the oil leaving from the edges. Next add the shrimp paste and saute for about 4-5 minutes. Add the fried eggplants slices and mix with the masala. Add salt to taste. Add a little water, say about about 1/3rd Cup. At low medium heat cook for about 5-6 minutes. At the end of this you will see oil surfacing.

Garnish with chopped coriander and 1 tsp of lime juice. Serve with roti or rice.

My Sister-in-Law's Methi Chicken

Before any of you go ballistic and start crashing up your iPads and say this recipe is a hoax, let me come clean and tell you this recipe of Methi Chicken does not need a single sprig of fresh methi green.

I mean you can add fresh methi greens if you want and it definitely would be a nice thing to do but on a chilly October evening when you do not feel like donning a jacket to drive out in quest of fresh Methi greens, stay put. Chances are you still have those pale brown almost saffron colored methi seeds in a small dabba on the left corner of your second kitchen shelf. Pull them out and also the box of MDH Kasoori Methi, fragrant and crumbling like old parchment. This and the chicken and you are all set to make my sister-in-law's methi chicken.

She, the sister-in-law, the husband's younger sister cooked this for us when we visited her early last month. Well actually she cooked a lot of other dishes, a lot and I mean it. She would call me up every day, a week before our visit and diligently note down stuff we might want to eat. I really had no clue why she was asking stuff like "Do you eat Luchi for breakfast or Paratha?", "Do you prefer pav bhaji with afternoon tea or pakori?". I assumed this was some kind of survey to trend the obesity pattern among legal immigrants and tried to be as honest as I could.My oldest very innocently informed her pishi(aunt) that we actually eat luchi only when Didun(grandma) is here and thus made null&void my verybusy-cooking-working-notime image that I had painstakingly created over the years.

The sis-in-law took it to heart and cooked anything and everything that the nieces or we might have lacked in our diet.

So during our short stay, while I scoured through all her FB friend's albums, passed smart ass comments and raised my eyebrows in a very Bindu-ish manner ; trying to retain my elder bhabhi stature the poor girl cooked, cleaned and fed us like the sweet Jaya Bhaduri in Bawarchi.

The girl cooked umpteen delicious meals but her methi chicken stuck with me from the moment I saw the delicious curry with a gossamer thin veil of oil which smelled of heaven. It is magical what power those tiny seeds can unleash all by themselves. White fluffy basmati rice drenched in this aromatic chicken gravy is what I will always remember of those four days and oh yes, some of her FB friend's scandalous photos but that we will not discus...

I have cooked this particular dish about 3 times since. Come on, it is easy, convenient and quick. The first time it turned out to be really good, the second time I skimped on the oil and chili and it was meh, the third I skimped on the time and oil both and it was again okay but not like hers or my first attempt.

End point is, if you want this to be dramatic you have to go easy on the oil, spend the time a chicken needs for "kashano" or "bhuno" and also give in and raise the heat. A bird needs some love and also oil if I may say so.

My Sister-in-Law's Methi Chicken

The recipe here is a rough one so feel free to use your cooking instinct

Marinate 2-2&1/2 lb of chicken( skinned and with bones or use boneless thigh portions) with
1 tsp Ginger paste
1 tsp Garlic paste
1 tbsp yogurt
1 tsp Cumin Powder
1 tsp Corriander powder
1/2 tsp Kashmiri Mirch
salt
a little Mustard Oil
a sprinkle of turmeric powder
Keep it in the refrigerator for 30 mins to an hour or more.

Now heat white oil in a deep bottomed pan or kadhai. Don't skimp on the oil unless you want a healthy chicken dish.

Temper the oil with 1/2 tsp of Methi seeds and 1/2 tsp of whole Cumin seeds. The Methi seeds should not burn but give out a nice fragrance. If you are unsure at the point the Methi seeds are turning brown, switch off the heat and wait for 2 minutes. Switch on the heat back again. The oil should be nicely flavored by now.

Add 1-2 cup of thinly sliced onions and fry till the onions are soft and turning brown. Meanwhile make a paste of about
4-5 cloves of garlic
4 hot Indian green chili
1" peeled and chopped ginger
Add this paste to above and fry for next 2 minutes

Follow with a chopped tomato and fry the masala till you know the usual "oil separates blah..blah"

Add
1 tsp of Cumin Powder
1 tsp of Corriander Powder
1 tsp of Kashmiri Mirch (I use kashmiri mirch powder but you can also use red chili powder according to taste)
and fry the masala with sprinkle of water

Add the chicken pieces, salt and then fry them till they change color.Let it cook uncovered for the next 15-20 mins or so, with frequent stirring. This process is actually called "bhuno" in Hindi or "kashano" in Bengali. At the end of this process you will see the oil separating , that indicates good things are in the making.

Now add 2 tsp kasoori methi crushed between your palm(or warmed a little in the microwave), mix everything well together and about 1/2-1 cup of warm water. Adjust salt for taste. Cook covered till chicken is done. By this point a thin layer of oil should float on the top indicating all is good.

Sprinkle some more of the kasoori methi and keep covered until you serve hot.

My Spice -- Garam Masala, Bhaja Masla & more...

Bengali Garam Masala is actually a very simple mix of 4 spices: Cloves, Cardamom, Cinnamon and Tej Patta. The Tej Patta as I have seen is abandoned many times in favor of the others. My Ma however loved it and used it whenever the recipe called for garam mashla as phoron (i.e. tempering the food by spicing the oil)

She would sun the above spices and in our stainless steel jarred Bajaj Mixer make a dry powder of them and store it as a guro Garam Mashla or as we say in English Garam Masala powder

I take a step ahead and put more stuff in my Garam Masala powder. I also dry roast the spices instead of just sunning them which is the norm. My version is NOT the standard bengali version. The Bengali version usually does not have Red Chilli or Mace

Spices I use to make my Garam masala powder

Dry Roast 20 Green Cardamom/Elaichi, 10 Clove/Laung, a 2" stick of cinnamon, 3-4 Dry Red Chilli for the slightest heat, 2-3 small barks of mace/javetri and a small Tej-Patta. Note: What I have here is a Bay Leaf but a small Tej Patta(Indian Bay Leaf) works better. Also you can substitute red chili with black peppercorns. You can dry roast either on the stove top or pop them in the oven at 250F for 5-8 minutes. The roasting is done only to warm the spices which have been lying around for a while. Instead you can sun them and then grind.

Grind to a fine powder in your coffee grinder.

Store in an air-tight container for future use




Lately I have been a sucker for home made spices. I cleared the pantry of all Shan masalas and barring the Kitchen King, Kasoori Methi and Amchoor I have no other store bought spice powder. Oh, wait I have a packet of Deggi Mirch which is used sparingly by us and and indulged on by the nanny.

So anyway without all the Shaan masala I was kind of stranded in no-spice land when I wanted to make a Kofta Pualo some time back. Luckily I remembered the Biryani Masala at Mallugirl's. I love that masala and use it for not only making Biryanis but in various other dishes.

Here is how I make Biryani Masala based on this recipe. I reduce the carraways seeds and increase the fennel as I like the sweetness of fennel and find cararway seeds too spicy. Also I forgo the star anise and add nutmeg powder instead of the whole.

Dry Roast 8-10 Green Cardamom/Elaichi, 8-10 Cloves/Laung, 2" stick of cinnamon, 1 small Bay leaf, 5-6 small bark of mace/javethri, 2 tsp of Fennel seeds, 1 tsp of Carraway seeds/Shah Jeera

Put all of the above in a coffee grinder jar along with 1 tsp of nutmeg powder

Grind to a smooth powder and store in an air tight jar




Use this masala for loads of stuff from adding a pinch to your pualo to spicing up the marinade for fish, from adding to biryani to your chicken curry. I use this masala alternately with Garam Masala but when using this, use a smaller quantity.


And then there is the Bhaja Mashla(Roasted Masala) my Ma makes for sprinkling over most chutneys and also in vegetable chops. I had blogged about it here in my Baked Beet Roll recipe. The Bhaja Masala is called so because the spices here are dry roasted and then ground. This spice mix has been blogged about in detail in my later post Bhaja Masla.

To make this Dry Roast 1 tbsp each of Jeera (Cumin Seeds), Dhania (Corriander seeds), Saunf (Fennel Seeds), 6/7 Laung (cloves) , 6/7 Elaichi (Cardamom), 3/4 TejPata(Bay leaves), an inch & half of cinnamon stick and peppercorns according to desired hotness.Then just dry grind it to a powder. Note: This was last made by my Ma and so measures are approximate



Punjabi Garam Masala

The recipe of Punjabi Garam Masala is from Anita of Mad Tea Party. Original recipe is here. I think her recipe asks for more of the black cardamom but I used about 15. Also I used the seeds and discarded the skin

I did it this way. To make this sun or gently warm on tawa 1 tbsp Cumin seeds, 1/2 tbsp Clove, 1/2 tbsp Peppercorn, a 1" stick of cinnamon, 1 tejpatta and around 15 black cardamom. Dry grind to a powder.

This weekend our kitchen floor is getting a makeover and so the kitchen will be closed for weekend. I am shacking up at a friend's place, kids in tow and the friend has promised to make a Patha'r Mangsho'r jhol for lunch tomorrow. She cooks delicious food and you know what I am looking forward to.
