Durga Pujo is almost here. Mahalaya is this Friday. The gorgeous blue sky, the kaash phool, the lazy cotton clouds and the fragile shiuli with their orange stem and fragrant notes is making it all very real. As if! The only thing missing is the "Sharodiya PujoShonkhya "which my Ma brought along with her way back in August. Now that is what I call "blasphemy". You should not have a "PujoShonkhya" in summer.  No, No. NO! In August you can only have trembling hopes for one or two. You have to wait and wait some more and then wait until Mahalaya to get your copy. For what is Pujo without its Pujo Shonkhyas.

The annual Pujo numbers -- Anandomela


Many, many years ago when I was a timid kindergartner, still struggling to read fluent Bengali, my Ma had given me the best gift on Durga Pujo. She bought me a shiny, thick, colorful book. It was the Pujoshonkhya Anandomela, the annual number of the popular Bengali children’s magazine published every year during DurgaPujo. I don't know what spurred her in doing this when I could just about manage to read the "juktakhors", the Bengali conjugant, but that single book set me on a path of loving to read and read more. When I try to think of that Pujo, from a long time back, I do not have clear pictures of Durga or the Asur. All I see is snippets of a well lit mandap reverberating with the beat of the Dhaak and a fat book with glossy cover plonked onto my satin frock's lap.

Since that day, Pujo for me has always meant waiting for the PujoShonkhya. While others waited for the squeaky clean blue sky of Sharat, the swaying kaash phool or the latest cut in salwar kamiz that the local tailor would reveal, I waited for my annual Puja number of Anandomela.

The full page advertisement announcing the book would adorn the pages of the biweekly magazine as early as April or May. Gradually the list of writers who would write for the year's number would be revealed. Satyajit Ray, Shirshendu, Sunil Ganguly…the list was rich and endless. Around end of August, my mother would book a copy for me along with a couple of Desh and Bartoman for herself, with the newspaper delivery guy.

From early September, my heart would take a dip and start beating faster every time I heard the ringing bell of the newspaper guy further down the street. "Esheche? Is it here?" I would shout as he skillfully tossed the rolled newspaper on the front porch. As he rode away shaking his head in the crisp Sharat air, I would be dejected only to live in hope and again ask him the same question the next day. You see we lived in a small town far from Kolkata and the magazines usually arrived late there. So the "pujoshonkhya" published in Kolkata would take a while to make its appearance in our mofussil market and even then there was no certainty to that.

And then one school morning, a week or two before Mahalaya, he would announce "Aaj Bikel e. Today afternoon". That day would be the most exciting one and I would rush home in the afternoon, my strides back home faster than others. Tossing my school shoes and book bag aside I would pick up the thick colorful book that sat on the center table. I held it close to my nose taking a deep whiff, I admired the nifty bookmark dangling on a thin lace and I quickly sneaked in to see the cartoon they had this year.

That afternoon I refused the call of my friends for a round of hide and seek or playing tag on the terrace. Instead I went to bed, tucked two pillows under myself and carefully opened the thick Anandomela to be lost in the next adventure of Shontu ar Kakababu or the quirky inventions of Professor Shonku.

Waiting for Anandomela was probably the best part of my pujo and that is the only part I miss these days. I also miss the fact that my daughters will never experience that yearning and eventually the deluge of happiness. For waiting for something is much more exciting than finally getting it.

Last weekend we made Hing er Kochuri at home. It seemed a very Pujo-isque thing to do. Also I am ashamed to say, it was my first time. Yes, I have sailed through half of my life without making a single Hing er Kochuri and the experience or rather the lack of it has not harmed me in anyway, as I see it. For, I have ate enough of them. And that is what really matters.

The thing is, I don't "deep fry" much. I kind of have a mental block which makes me eat "deep-fried" goodness by the kilos as long as someone else is "deep-frying". The moment I see all that oil, something in my brain goes "Twang" and I hyperventilate. I was not always like this. There was a time when I loved deep frying. But at that time, I feared anything that had to do with "dough" unless of course it was "play-doh" which "Duh! is not dough". But lately and specifically after my "small organ where bile is stored" had to be removed, I don't seem to work well after a meal of "deep-fried goodness". Of course it would be okay, if I did so in moderation. But moderation is never the keyword when things are being dunked in hot oil.



So anyway since Ma is here to give expert advice and all, I felt it was the right moment to make Hing er Kochuri because you know my girls need to remember their Mother's kitchen as one where kochuri puffed up and yadda, yadda, yadda. But what is Hing er Kochuri, you ask ? Well it is a deep fried savory snack almost like a luchi or puri but with stuffing made of spiced Urad Dal paste and with a strong and beautiful aroma of hing or asafoetida. It is usually served with a side of Cholar Dal or Alur Dom. But in this recipe I served it with a Aloor Tarkari or a Potato Dish inspired by A Mad Tea Party



Usually I don't write up a recipe unless I have tried it a couple of times. But I figured that would make it 2016 until I put up this recipe. And really the recipe is perfect, it is the expertise which many of us need to gather to make stuff like this, that needs to be worked on. And we can all do that until 2016 strikes. Until then here is the recipe to follow.






Hing er Kochuri

Make the Stuffing 

Soak 1 cup of Urad Dal/Kalai er Dal/Biulir Dal overnight in water. Yep. Shuddh nirmal paani aka H2O aka water.

Next morning forget that you have soaked urad dal

Then in the afternoon when other folks in the house ask you why is there some dal soaking in a container, it all comes back. **Ting**. You have to grind the Dal. To make Hing er Kochuri.

All enthu, you put the dal in a blender along with
3 green chillies
1" ginger chopped

With aid of very little water, make a coarse paste. Not very coarse but not smooth like a Vada batter either.

Now you heat some mustard oil in a kadhai. I would suggest to use non-stick.

To the hot oil add
1/4 tsp of Hing/Asafoetida
1 tbsp of grated ginger
1/4 tsp of ground fennel seeds

Add the dal/lentil paste that you made. Add salt to taste and a pinch of sugar. Mix well.

Now comes the part where you have to keep stirring like a maniac. Okay, maybe not maniac but still considerable stirring as the st***d paste tries to stick to the kadhai. You might also have to add some more oil in the process.

Eventually your hard work will show some result. The paste will slowly start coming off from the sides and will get drier. It will also no longer taste or smell raw and will actually taste pretty good on eating. If it does not taste right, adjust the spices and keep stirring. Add little more Hing/Asafoetida if you feel the aroma is missing.
But take heart, this whole process takes a mere 20-30 minutes of your lifetime and life gets better after this.

Once you have the stuffing, keep it aside and make the dough for the kochuri. You could also have made the dough earlier, while the dal was soaking and all but then such foresight is not my plus point.

Make the Dough

In a wide mouthed bowl add
1 cup of AP Flour/Maida
1 cup of Whole Wheat
pinch of salt
1.5 tbsp of Vegetable Oil

With your fingers rub the oil in the flour. Then gradually add warm water to knead the dough until the dough is soft. Cover the dough with a damp towel and let it rest.

Note: My Mother later said that she also adds a sprinkle of hing to the dough for a more Hing-y flavor, so try that.

Make the Kochuri

Take a small ball of the dough. It might take 2-3 tries until you settle at the right size. The size should be like a gooseberry/amla. Roughly make about 20 dough balls out of this dough.

Dip the tip of the ball in oil and then flatten it between your palm.

Now roll it out to a 2" circle. Take a little of the stuffing and put it in the center. bunch up the sides of the dough disc now to form a purse like formation. With your fingers, close the top of the purse so that the stuffing does not come out. Flatten it between your palm and you are ready to roll.
Note: You can also stuff it the traditional way by making small dent in the flat disc, putting the stuffing in and then sealing the dough disc

Roll out the stuffed ball into small discs about 3" in diameter, same size and thickness as that of a luchi or poori. Well maybe a wee bit thicker than luchi

Heat enough oil for frying in a Kadhai. When the oil is hot, dip the rolled out disc to see if the oil bubbles. If it does, slowly release the disc in oil and press with a slotted spoon coaxing the kochuri to puff. Once the kochuri puffs up and takes a shad of pale brown, take it out and get ready for the next.
Note: Now honestly, I might write all the theory but this step takes some practice and mine fails to puff up 40% of the time. So it is okay. Even if it does not puff up, it tastes really delicious.


Kochuri needs some Alu Torkari and different homes make it different way. Another favorite to go with Kochuri is the Cholar dal, a hot favorite to be precise. However, having made Anita's station aloo a couple of times, I have fallen in love with it and so that is what I made to go with these Kochuri.


Alur Torkari inspired by A Mad Tea Party

Chop 4-5 large potatoes in quarters and put to boil in the pressure cooker. We will peel them later.

Once the potatoes are done and have cooled down, peel the jackets and crumble the potatoes by hand. Don't mash them, just gently crumble.

Now heat some mustard oil in a Kadhai.

Temper the Oil with
1/4th tsp Hing
1/2 tsp Cumin seeds
2 Tej-Patta

Follow with a tbsp of grated ginger.
Once the ginger sizzles, add 1 small chopped tomatoe and 5-6 broken green chillies.
Fry till the tomatoes are all mushed up.

Add 1 tbsp of Coriander powder, Turmeric powder, salt to taste and saute for a minute.

Add the potatoes and then add about 2 cups of water. Stir around and let it come to  a boil.

Let it simmer for about say, 10 -12 minutes. In between break up some of the potatoes to give a thick texture to the gravy. Taste and adjust the spices.

Both my daughters enjoyed the Hing er Kochuri and Torakri a lot and I think I have to make it soon, if only for then.

Nimki -- salty, crunchy for Bijoya

I used to like October a lot, a humongous size of a lot, more than 2.5 acres of a lot. I would count the days leading up to Shoshthi, the days of missing school, the days until the magazine guy would drop off the anandomela on the front porch and the days until we would pack up or suitcases and metal trunks to wait at the small station early in the morning with sleep in our eyes.

I still like it a lot though none of the above happens but today I will not tell you about Durga Pujo or its aftermath.It is anyway over and I have written enough posts about it in the last 4-5 years.And honestly some of them even read like pure sentimental crap if I go back and read them all over and I don't want to repeat that.

I mean come on it is just one more festival man ? So yes, it is like the Bengali Chirstmas if there is ever such a thing and if I have to explain to my non-Inidan colleagues who I am sure worry why I leave work obscenely early on certain 4 days in October. And we do not have a tree but we have a whole family of idols dressed in the finest jewellery that would give any Christmas tree bauble a run for its money. And everyone gives gifts mostly clothes instead of toasters, and since there is no brilliant tradition of gift receipt in India you end up with a whole lot of unnecessary madras silks and ikkats in colors like parrot green which you wouldn't be seen wearing even in your nightmare. Also if you are married there is enough tension running about who spends the Pujo at whose home and whose Mom gave the more expensive sari and who actually would rather spend Pujo vacation in Mauritius than in the by-lanes of Maniktala.

So if you look at it detached with a global angle it is really just one more festival. It took me a whole awful lot of years to understand that and I thought it is best I tell you that early.

Instead I will tell you about Ballerina today. Not a Ballerina but The Ballerina as in the ballerina by Bata, the shoe company who cried themselves hoarse months before Durga Pujo, declaring "Pujoy Chai Notun Juto"(You need new shoes for Durga Pujo). Their marketing tactics must have been well researched because my Baba took this to heart and waited all year until September, a month before Pujo,  to buy me a new pair of school shoes.

It really seems odd now that though the school year started those days in January and later in May or June, we always bought new school shoes just before Pujo in October. Along with the Ballerina, I would also get a fancy pair of Marie Claire open toed sandals with straps that went firmly around one's ankles. But it wasn't the Marie Claire that would be the high point of our shoe shopping, it was always the Ballerina.

Baba believed in value for money and a shoe that was to be worn for every single school day needed utmost care and scrutiny in selection. It had to be that perfect elusive size which would fit a growing feet all year round. This needed trial, lots of them. Even after my feet size was measured on that inclined plane which Bata offered by an all knowing Bata gentleman, the probabilities were still wide ranged.

As boxes of Ballerina were brought down and piled high, I would wear each pair and then walk around the store in them, very reluctantly if I may say so. Baba would then ask me to jump in those shoes and do short runs. Sometimes a stamp or two in preparation of days when I might need to show my anger. And also marches, left-right-left because the republic day parade was only 3 months away. Walk-Jump-Run-Stamp-March.

This routine was followed for at least 5-6 boxes, each followed by vague questions like, Did the shoes hurt ? Did I have to scrunch my toes as I walked around ? Did they tend to slip off when I jumped ? Did I think they slowed me down when I ran ? All this when I was the least athletic kid a school could produce and hadn't won a single race beyond the second grade.

This question-answer part of the process made me very nervous. A wrong answer on my part could lead me to be doomed with the wrong pair of shoes for the entire school year. And no one wants to be in wrong shoes, ask Cinderella. I would ho-hum and complain a bit about each pair, nothing significant but how none was perfect and thus try to remain my diplomatic self.

Finally after hours a pair of spit polished black ballerinas were decided on and instructed to be packed. The Bata gentleman strangely did not show any annoyance during the process and actually supported the whole ordeal by making serious weighted comments just like my Baba did.

The day after the Pujo vacation was over, I would go to school in my new Ballerina and that evening there would be a band-aid on my ankle where the much researched pair hurt the most.

Now to the salty, crunchy, Nimki a staple Bijoya snack along with Narkel Naru and Ghugni. This time three generations of women in our home, sat down together to make nimki. While my Mother made the dough the others pitched in with their own version. I took pictures. Suits me.

Nimki

To make the dough

AP Flour or Maida -- 1&1/2 Cup
Whole Wheat -- 1/2 cup
Salt -- 1/2 tsp (adjust to taste)
Sugar -- 1/4 tsp
Kalonji -- 1/2 tsp
Baking Powder -- 1/4 tsp
Oil -- 4 tbsp
Water -- 1/2 cup added gradually.(I am not totally sure about this, may have needed a little more)

For Frying

White Oil -- 1 cup for frying

How we Do It

In a wide mouthed bowl add

All Purpose Flour/Maida -- 1+1/2 Cup
Whole wheat Flour -- 1/2 cup
Salt -- 1/2 tsp
Sugar -- 1/4 tsp
Kalonji -- 1/2 tsp
Baking Powder -- 1/4 tsp
Mix with your fingers

Now add about 4 tbsp of White oil. With your thumb and forefinger, rub the oil into the flour mixture so that the flour looks all crumbled.

Add the water gradually and work the flour to make a tight dough. Knead the dough well for about 5 mins till it is smooth. Cover with a damp cloth and let it rest for 30 minutes or so.

Divide the dough into 4-5 large round balls. Roll out each ball into thin circle. With a fork or sharp tip of the knife prick the rolled out dough to avoid the nimki fluffing up.

Now cut the circle in small diamond shapes.

Heat enough white oil for deep frying the diamond shaped pieces of dough (about 1 cup). Fry the pieces until they are uniformly browned. Remove with a slotted spoon and drain on paper towel. Once it cools down, store in air tight container.

Bangali Triangle Parota ar Alu Bati Charchari

2.The Liberty Science Center is a whole lot of fun when there is no one around.

3.The kids faith in Santa was re-instilled. BS got her toy which changes hair color only it needs icy cold water to do that and I am unable to provide icy cold water in this icy cold weather. LS got her "geef",a Thomas engine and couple of books.

4."Pippi Longstocking" and "Katie Kazoo" are some new series that I got for BS.

3.I must edit my last post to add that Sheela and Munni are now the mainstays of Bong parties. So move over Ms.Lahiri.

4.Indian Chinese for Christmas works perfect.

5.We have been snowed in and housebound for the last 3 days and I wish Santa had gotten me a gift, a transmogrifer.

6.I saw "Up" after every one in the world has seen and said everything about it.

7.Teen kona parota or Bengali Triangular Parotas are not all that difficult and can be made without the aid of a compass and protractor. I say Bengali because I have not seen Triangular Parathas in any of my non-Bong friend's house.

I have been so afraid of making the standard Bengali Triangle Parota all my life that I never ever attempted them. I would wait patiently for the Ma or Ma-in-law to turn up and serve them. I had such a mind block that I never even stood beside them while they rolled out the perfect isosceles triangles. And geometry wasn't even my weak point.

Honestly, I wasn't even sure why they were better than the circular ones and I thought it was just a lot of hype. My doubt still continues.

Then everything changed on a sunny November Sunday morning, when I told a friend staying the weekend with us, "Chal Parota banai"(Let's make Parota). Timidly I asked her if she knew to make triangular Parotas. She pooh-poohed the whole thing, saying it was no big deal and showed me how. While she expertly made 10 of them in 5 minutes, I struggled with two but at least I got some bell like shape out of it.

There after I got into the groove and made them again. They now looked better. After some more attempts I can now say, Triangle Parotas are easy to make. Why they are important I cannot tell.

Repeat after me.

You guys have a great next year. Make your resolutions and stick by them. When making teen kona parota is the high point of my life, it is natural that I resolve to do nothing better.

Bengali Triangle Parota


What You Need

AP Flour/Maida ~ 1 cup
Whole Wheat Flour ~ 1 cup
White Oil for shortening ~ 1&1/2 tbsp. many people use ghee as shortening too.
Salt ~ a pinch or say 1/4tsp
Warm Water ~ 1 cup(added gradually). Some people add warm milk to make a softer dough, I haven't, you can try.
Dry Flour ~ in a plate for rolling the Paratha.

How I Did It

In a wide mouthed bowl add the flour, the salt and the oil for shortening.
With your finger tips rub in the oil into the flour.
Now gradually add the warm water working the flour into a dough. If it becomes too watery don't panic and add a smattering of flour but it is smart to be cautious with the water.
Knead the dough till it does not stick to your fingers at all.
Keep on kneading till the dough becomes alabaster smooth, soft and pliable.

Cover with a damp cloth or damp kitchen towel and let it rest for 15-20 minutes.

Once again pummel/knead the dough and make small ping-pong sized balls from it.

Now start rolling as follows


Take a ping-pong size ball, flatten it between your palms, dust with flour.


Roll a small circular disc


Fold along the diameter to form a semi-circle


Take the right end of the semi-circle, lift and fold along the radius to meet the left end


Gently roll and elongate the sides to get a triangular bell shape


Roll some more, maintaining the shape. Thickness should be like the regular paratha.


Heat a skillet/tawa. Place the rolled paratha on the heated tawa and cook on one side until bubbles starts to appear.
Flip the other side and pour oil in drops around the edges of the paratha or spray the surface with cooking oil.
After half a minute or so flip again and again add oil around the edges. Keep doing this, every side half a minute or so until the paratha is cooked on bot sides. There will be little brown spots on the surface and then you know you are done.

Alu Bati Charchari

I have a post on bati charchari with a lot of vegetables

This one is done only with potatoes

Peel and chop 3 medium sized potatoes in 2" long pieces.

In a heavy-bottomed deep pan heat 3 tsp of Mustard Oil

Add 4 hot Indian green chili, slit halfway

Add the potatoes

Add salt to taste + 1/4 tsp of turmeric powder and mix well. Saute for a minute

Add 1 to 1&1/2 cups of water.

Cover and cook without any stirring till potatoes are cooked and water dries up. If needed add more water for cooking

Once done, add 1-2 tsp of Mustard oil on top before serving

Best enjoyed with Parota, Luchi or Roti

Koraishutir Kochuri na Koraishutir Parota

Today I will not talk much and we will have a peas-ful time.


Koraishuti|Motorshuti| Sweet peas, whatever you call ya, has sweet, nostalgic ties to our Indian childhood. It was a coveted vegetable that made its appearance in our childhood sabji markets only during winter. Since it stayed around for only a couple of months, it was much adored and cherished, just like anything else that is not routine or regular in our life.

Almost all of us have fond memories of shelling sweet peas with the winter sun on our back, our feet stretched out on the colorful madur on the terrace. Grandmothers, aunts, mothers, cousins, all sitting together and shelling sweet peas, amidst gossips and tales of joys and sorrow. Sweet Pea was not just a vegetable, it was something that brought families together. And if all the shelling was toward Koraishutir Kochuri for dinner, our joys doubled and triple until it spilled over in the winter sun

But today there will be no nostalgia about shelling green peas by the mounds on winter evenings watching Chitrahar on DD1. No fond remembrance of the waxy pea pods and their sweet pea smell.Not a word about how the pea pods would taste in a jhol Ma would make. I could have lapsed into sweet memories of my Dida making koraishuti'r kochuri and us huddled in the pantry below the stairs, shelling peas, popping a couple of peas from each pod, laughing and the mound of peas growing much smaller than the mound of gathering pods.

But I will not speak thus because I did not shell a single this Friday night. I used my pack of frozen Birds Eye peas in the freezer. I lost out on the bonding over peas but on a Friday night when all I wanted to do is fix dinner and conk off, the shelled sweet peas worked more than fine.

And also let me clarify, I did not make Koraishuti'r kochuri. No, I made Koraishutir Parota. Not much difference except for a gallon of oil here and there. Not that a gallon more matters when it's the season to be merry. But I had just consumed pounds of butter a week back and did not think following up with a gallon of oil would be judicious.So Koraishuti'r Parota it was.

Updated on Dec 30th 2017: This post has been updated with the Koraishutir Kochuri recipe which I made again today. I have realized a gallon of oil does not a difference make when serious stuff like Kochuri is around. So if you scroll down you will get the Kochuri recipe!!!

So towards this venture let's first make the Pur or the stuffing made with peas only. It is easy and quick if you have a freezer and peas in them.



The stuffing remains same if you make Kochuri or Parota.

This makes stuffing just enough for 8 Parotas or 12-14 Kochuris. Take into consideration that if you are like me, you will eat the stuffing just like that too.

Defrost 2 cup of frozen sweet peas. I usually prefer the Microwave for such purpose.

Put in a blender
the peas
1 tbsp of peeled and chopped ginger
2 green chili(optional)
very little water, a tsp to start with
Make a fine paste

Heat Vegetable Oil in a frying Pan

Add a pinch of Hing/Asafoetida. I will insist on this as it lends an awesome fragrance. Many Bengali homes will add a little whole cumin instead of Hing, but I will steadfastly stand by Hing. I sometimes do the tadka with cumin + Hing.

Add the pea paste that you just made. Sprinkle 1 tsp of Dry Roasted Cumin + Red Chilli Powder(Bhaja Moshla). Add salt to taste. If your peas are not sweet enough add a little sugar. If you like it hot add some Red Chili Powder. Improvise.

Now keep stirring till the water from the pea mix totally evaporates and the mixture becomes dry, thicker and congeals like in 4th picture anti-clockwise. This takes a good 15-20 minutes or more. Basically it should come to a stage where you can make a small ball for the stuffing.


The Koraishutir Parota

Now let us first work on the dough for the Parota. I am not really a flour girl and flour intimidates me. So though I have tried to bring it all down to numbers the merit of your dough is in your kneading

The following measure makes more Parathas than the stuffing I made. Since I make smaller sized Parathas this measure gave me about 14 small parotas.

AP Flour/Maida ~ 1 cup

Salt ~ a pinch or say 1/4tsp

Roll a small disc



Make a small ball out of the stuffing and put in the center of the disc



Bunch up all sides to make a purse



Now pinch the dough to cover up the opening and flatten it out on the palm of your hand.



Roll out sprinkling a little dry flour as you go



Heat a skillet/tawa. Place the rolled paratha on the heated tawa and cook on one side until bubbles starts to appear.

Flip the other side and pour oil in drops around the edges of the paratha.


After half a minute or so flip again and again add oil around the edges. Keep doing this, every side half a minute or so until the paratha is cooked on bot sides. There will be little brown spots on the surface and then you know you are done.


Koraishutir Kochuri



For making Kochuri we use more Maida/AP Flour and more shortening


AP Flour/Maida ~ 2&1/2 Cup
Whole Wheat Flour ~ 1/2 cup
VegetableOil for shortening ~ 3 tbsp

Make the Dough like dough for Luchi

In a wide mouthed bowl add the flour, the salt and the oil for shortening.
With your finger tips rub in the oil into the flour.
Now gradually add the warm water working the flour into a dough. If it becomes too watery don't panic and add a smattering of flour but it is smart to be cautious with the water.
Knead the dough till it does not stick to your fingers at all.
Keep on kneading till the dough becomes alabaster smooth, soft and pliable.

Cover with a damp cloth or damp kitchen towel and let it rest for 15-20 minutes.

Once again pummel/knead the dough and make small ping-pong sized balls from it. For Kochuri make smaller sized balls.

Roll Out

Now to roll out, follow same steps as the Parota.

Kachuri is deep fried and smaller in size so make smaller discs. Put stuffing and roll just like above only a bit thinner.

Fry

Now heat oil in a wok/kadhai and deep fry the kochuri till both sides puff up.

Enjoy these with some Alur Dom or Cholar Dal or just by themselves.
