Stir Fried Egg Noodles

What is it about enlarged mammary glands and disproportionate stick thin limbs that attract little girls ?

What is it about Barbie ?

Stir fried Noodles are an all time favorite with S. Strangely this is one of the few dishes that have survived the taste of time. Most Saturday brunches at our home is egg noodles with vegetables, eggs, shrimps and maybe sausages, cooked mostly by her Dad. For weekday packed school lunch I make a similar but quicker version with Maggi minus the tastemaker.

This is a favorite with the adults in our home too. With a dash of hot sauce and some green chillie in vinegar, this easily converts to a bowl of spicy delight.

Stir Fried Egg Noodles

Cook 250 gms of egg noodles according to package directions. I usually add a few drops of oil and salt to the water and let it come to a rolling boil. Break the noodles by hand and add it to the water. Once the noodles are cooked, drain in running cold water and toss with a little olive oil. This will help to keep the strands separate and not turn into muck.

Heat Vegetable Oil in a wok

Add 2 cloves of garlic minced followed by 1 medium onion finely chopped

Fry the onion till it is soft and translucent

Cook veggies like sliced carrots, french cut beans, spring onions, peas etc. in the microwave. I have added carrots, french cut beans and asparagus this time. I also add small florets of broccoli or cauliflower at times. Thinly sliced cabbage and bell peppers are another common choice.

Add the veggies to the wok and stir fry for a minute or two, at high heat. Alternately, stir fry the veggies separately and keep aside.

To the wok, add salt to taste, a sprinkle of white pepper powder, about 2 tsp of Dark Soy Sauce, 1 tsp of White Vinegar and 1 tbsp of tomato ketchup. Add a tsp of green chili sauce for grown ups.
Mix well and then add the noodles. Combine the noodles with the sauce and veggies and fry for a couple more minutes. If you have stir fried the veggies separately, now is the time to add them to the noodles in the wok.

Meanwhile in a separate frying pan, cook sausage and eggs. I usually scramble eggs and chop the sausage. You can skip this step or do your own thing

Add the eggs and sausage to the noodles and toss to combine. If it is only for grownups I add some green chili rounds to vinegar and then at the end add these green chilies to the noodles.

Adjust for seasoning and serve. This also makes for a great lunch box item.

  6. Ah, Barbie - stay away from those ideals of femininity as far as you can. There's enough pressure on us to be slim and beautiful even without her!

    After I don't know how many years, I ate 2-minute noodles yesterday, and thoroughly enjoyed myself.

    Slight difference in what I do. I add the veggies at the end to keep the crunch.

    I add the meat in the beginning and the noodle to it. Don't wanna miss an inch of the flavour :)

    Though with pesticides and all you can't under cook veggies I guess

  8. I remember when i was at school the maggi just came out in Kerala and this was a treat when mom made and i mean a treat as mom used to say the money she spend to buy maggi packets she can buy other things.
    I always love thies even now, my favourite.

    It is a brand we get at the Indian store. I think it is called Golden Key Egg Noodles or some such, have also seen same brand in Asian stores. I also use the Ching's brand sometimes but like the Golden Key better


    Yeah Maggi is when we really have 2 or maybe 4 mins :) These egg noodles though takes more time than Maggi are a whole lot delightful


    Add veggies at the end ? I am not sure if S will like it. This way the veggies are fried a little

  14. Mmm..this looks yummy. I had noodles with only veggies. But my favoite is To Ramn's Curry noodles. Maggi is a bland version for me. But my son can eat maggi for evenings. Definitely not for lunch as could hardly eat one serving of noodles. Big Sis S seems to be having lotsa pampering! Hugs to her :)

  15. True Sandeepa. Depends on the veggies. i use bell peppers, spring onions and carrot juliennes if at all. Putting them at the end gives a nice salady crunch

    But better not mess around with S :) It's not easy to feed kids veggies after all

    btw I have tried Chings. Not very good. I Prefer the cheaper one gets here from small companies

  17. Simple and delicious. DS loves this one. That reminds me that I have anotehr version of this one sitting in my drafts for a long time, need to post it. Since I did not have noodles, I used spaghetti for this :-)

  18. I have heard fabulous comments about this dish, but unfortunately I have never tasted it. However, just watching the ingredients is obvious how healthy it's. I'm gonna print the recipe to prepare it later.
