Oats Upma -- when you are trying to eat healthy


After eating the totally delicious pound cake for a month, I realized I needed to stop! I mean really, really stop and do something. Of course as a fallout of all the cake eating, there was a question of the weighing scale in my bathroom groaning and complaining. I couldn't let a weighing scale ruin my life could I ? So I actually moved it in the closet and shut the door on it.

But then Big Sis declared a restriction on my eating pound cakes, saying I should only eat one slice a week. It was a difficult rule to stick to, which meant I didn't stick to it, and all slices of pound cakes in my pantry were finally finished. This is when I realized I should really stop and go back to my healthy lunches routine.

I am good with my healthy lunches usually but I have realized if I fall through the crack, the crack morphs into an abyss and I have a harder time getting back up. It had to be something simple and yet tasty to haul me back on track. So I was back at making my Oat Upma. I like my oatmeal with mangoes and yogurt but this spicy oat upma is different. It doesn't make you feel all martyr like and holy and sacrificial because you are eating oatmeal while the world besides you is chomping on a philly cheesesteak. You feel proud about it actually and it only takes minutes to make.

Now in our home, we make this with steel cut oats as that is the only kind of oatmeal we buy(unless we are making oatmeal cookies which needs rolled oats but I will not talk of cookies any more). Also the husband-man usually make the oat pulao  but my method is little different from his !!! This time I bought a quick cooking steel cut oats which cut down the time to make this dish by 1/3rd, so if you find this particular kind in your store, do get it. And no, Bob's Red Mill did not sponsor me or even cares how I make my oats.

Bread Pulav or Pau(n)rutir Pulao -- for school lunch


Many of you send me mails asking about ideas on snack and lunchboxes for kids. I had started a blog last year where I could record the lunch I send for Big Sis but after few weak attempts, I have now realized that I did not post many lunchbox recipes there. Now there are multiple reasons for this and I will just list the general points about a school lunch in our home:

1. Though I try to send a wholesome lunch from home on most days, they are not spectacular by any means. In the morning rush, while I am warming and packing the thermos, I fail to take a pic of the said lunch, even if it is a phone pic. So on most days there is no living proof of the packed lunch.

2. The lunch I send is kind of repetitive. As in, it repeats every week or so. Big Sis wouldn't want to see any surprises at lunch. She is not the kind.
A general idea of  the lunches that I pack for the 10 year old is -- Pasta tossed with veggies and store bought sauce, pasta with veggies and olive oil, Upma, Leftover rice that has been stir fried and a side of yogurt, Stir fried Noodles, occasionally a Nutella sandwich, sometimes paratha and at times mini wontons or ravioli from Costco.

3. The 10 yr old also has a snack time sometime around 10 or 11 and for that I send one of these -- usually fruits(banana or berries), cheese and crackers, granola bar and sometimes store bought yogurt cups.

4. I usually have the lunch ready in portions the night before. The next morning all I have to do is heat and pack the thermos.

5. At least once or twice a week, Big Sis eats lunch offered by the school cafeteria. The menu is sent out at the beginning of the month and she picks days on which she thinks the food will be to her liking. The main complaint about the school food I have heard from her is that the portion is too less. I have not seen it and from the sound of it, it does look wholesome and appetizing (barring certain days). It might be a portion control thing which the cafeteria is trying to impose, which is not all that bad, but then again I cannot be sure unless I have seen the food.

This week since we had too many loaves of bread in the pantry, I made this bread pulao for school lunch. My Mother, the avid snack and tiffin maker, would make this bread pualo very often. The husband-man has been so enamored by the idea after my Mother taught him, that he makes it often for weekend. His version has sausages and eggs and is very filling.Usually we have it for weekend brunch but with the overload of bread, this pulao seemed like the right thing to do for school lunch last week.



Big Sis's school has something called the "Battle of the Books" for which they have been reading a variety of books suggested and loaned by the teachers. I have not had a chance to read them and so she very kindly reviewed few of those books in my Kids' blog.If you are looking for book suggestions for 9-11 year olds, check them out. Bread Pulao -- for the lunchbox

Warm six slices of bread lightly. Then cut each bread slice in cubes. I leave the crust on and use whole wheat bread.

Heat Olive Oil or any Vegetable oil.

Flavor the oil with a clove of garlic finely minced

Then add some finely chopped onion and saute till onion is soft and translucent.

While onion is frying, microwave a bowl of mixed vegetables. I use a mix of carrots, corn and green beans. You can use any vegetable you fancy.

Add the partly cooked veggies to the frying pan and saute for few more minutes

Now here is the point where you go out on a limb and add any ONE of this to the frying pan

1. You can add a tsp of soy sauce and 2-3 tbsp of Ketchup

2. You can add some tomato-basil sauce from a jar(around 3 tbsp)

3. You can add some red chilli powder and dhaniya-pudina chutney (or green sandwich chutney)

After you have added the base sauce, let the vegetables cook

Once the vegetables are done, add the bread pieces and toss quickly with the vegetables and sauce.

Add salt and some black pepper powder to taste. Go easy on the salt if you are adding cheese later

Now since I use whole wheat bread which doesn't get soggy, I drizzle about 2 tbsp of milk on the bread at this point. This helps the bread to soften a little. If you see bread pieces are coarse, you can also drizzle a little olive oil on them.

Once I have tasted and checked to see everything is right, I add some parmesan and give the bread and veggies a last toss.

On cooling, I pack it in portions for lunch next day.

To add some protein to this dish, add a chopped boiled egg OR chopped sausages OR some boiled black eyed peas OR fried peanuts

No crust Quiche or Baked Frittata ?

Now that the writing for my book is towards the end and is at a point-- where I am having the I-want-to-scratch-the-whole-thing-and-start-all-over-again-but-even-then-I-am-going-to-write-the-same-thing-so-we-will-wait-for-the-editor syndrome -- I find myself with some time after 9:30 at night .

Since I keep referring to the book as my third child I must tell you this was kind of similar to the sentiments that swept over me when I was second time pregnant. My first pregnancy was a difficult one and most people in their sane minds who knew me did not think that I would go in for a second haul."Are you crazy?" they suggested in unsaid words. But I dearly, dearly wanted another child. And then the moment I knew it was going to happen--I was dead scared. But eventually everything fell into place and I am very very grateful for my daughters. If I had to do it again I would do it the exact same.

So anyway instead of doing anything worthwhile after 9:30 at night like cooking,tidying up the kids' clothes dresser, making healthy lunches etc. etc. I watch television.I watched reruns of Everybody Loves Raymond and then I watched The Big Bang Theory every day last week and in the process I also managed to watch two Bangla movies back to back.

The movies were courtesy a friend and probably we would have never watched if she hadn't insisted, logged into her movie account and started us off on the whole thing. The movies were brilliant. There was a time when Bangla movies were gorgeous in Black&White, Uttam Kumar, Suchitra, Bhanu Bandopadhyay, Madhabi Mukherjee and the works.Then came a brief period where the general situation was pretty bad and it was sheer blasphemy if you watched anything other than Satyajit Ray, Mrinal Sen or Ritwik Ghatak. Then for the last decade or so I watched only movies made by Rituparno Ghose or Aparna Sen.

In the last two years however things seemed to have improved immensely in the Tollygunje studios or wherever they shoot Bangla movies. I have watched a number of pretty decent movies lately and "Bhooter Bhobishyot" that I watched recently took the cake. Thanks R for finally making us watch it. The dialogues were hilarious, the acting impeccable and the movie was really perfectly funny. The movie comes with subtitles and though the essence of the dialogs may be lost in that try to see if you like it.



The other movie that I watched was Royal Bengal Rahoshyo based on Ray's very popular Feluda series and directed by his son. I had not watched a Feluda movie since the originals(Joi Baba Felunath and Shonar Kella) and was a bit apprehensive but the movie at times reminded me of the master with similar music scores and certain touches. Of course no one can replace the original Lalmohan Ganguly but we make do.

And now to the food which this blog is apparently about. If you have been reading me for a while you know how much I love the egg muffins that I learned from Kalyn's blog. I also love a frittata and many days it makes a nice dinner for us. Now combining the two I have started making a baked Frittata kind of thing or say a crustless quiche kinda dish. Since it is super easy and cooks itself in the oven, leaving me time to do what I please I am hooked onto it and try to make it at least once a week. It is really one of those wholesome, healthy and easy dish which you desperately need to bail you out mid-week. The dish is also very flexible and you can add/subtract your own spices/vegetables/what-have-you to make it your own special dish.

Here is how I do it.

Baked Frittata or Crustless Quiche ?


Grease a oven proof baking dish with olive oil. Add some sliced onions and halved grape tomatoes. Sprinkle some salt. Toss the onion-tomatoes around so the they have a fine sheen of olive oil.

Put this dish in the oven turned on to 400F. This is my toaster oven setting and will vary for your larger oven. In 10 mins or so the onions will start softening and browning a little as will the tomatoes.

At this point add the vegetables. Here I have added some baby spinach. At other times I have added finely chopped bell peppers or steamed broccoli florets. For the pepper and broccoli you can saute them in a fry pan and then add them to the dish too. Oh, and if you get the bag of onion-peppers from the frozen veggies section it works very well in this dish.

Next tear up a single slice of bread and add it randomly. You can totally skip this step though.

Add some grated Parmesan. And then pour in the eggs. I used a 16oz carton of egg white and it made a thick frittata. You can use whole eggs beaten too.

To spice it up I added garlic powder, red pepper flakes and salt. You use your imagination.

Bake at 400F for 25-30 mins. Again this is my toaster oven setting and will vary for your larger oven. Once done check with a toothpick to see that it is cooked through. Now put your oven on broil and broil for about 10 mins to get a crisp surface,

Black Bean Salad -- one more light Lunch

The whole of winter we rarely ever see our neighbors except little neighbor girl of course.

Come summer everyone creeps out of the woodwork.There is weight that has been lost, pounds that have been put on, hair that has changed color and in some cases babies that have sprouted.I wouldn't even have recognized the same people in a different surrounding.

Last week on a balmy summer evening, we had a neighborly potluck dinner to get acquainted with the winter changes, to exchange smiles and discuss updates before we all go into hibernation again.

One of the neighbors had got a Black Bean Salad which was very refreshing and perfect for the weather. It was a new thing for me too given that I had never made or tried a black bean salad before.

I made it on Sunday for a Monday Light Lunch. Usually my weekday lunches are pretty light. I also like them better if they can be made quick. This served both purpose.

This is all you need. Feel free to substitute and add anything that goes.

Drain and rinse a can of black beans thoroughly. You can also use dried beans which you then have to soak and boil.

Chop up the following very fine
1/2 of an apple
1 jalapeno
1/4 of an onion
1/4 of a green mango
Note: Add or substitute with anything else you like. Also if I am saving this for next day I will not add onion until tomorrow.

Put all the above in a big bowl, add salt, add chaat masala, squeeze some lime juice and mix.

Dump the rinsed beans in the same bowl and mix again. Adjust for salt and spice.

Add a handful of cranberries.

There done, refrigerate and have this for lunch tomorrow. You can add avocados, julienned carrots to this one and use it as a filling for a wrap the next day.

Parmesan, bottled herbs like oregano, thyme, et al are actually quite common. Even small Mom and Pop supermarkets these days stock bottled Parmesan shavings.
Feta is probably a little more difficult to find but in Bombay, a slightly more up...market food shop like Spinach or Godrej Nature's basket will have it. And yes, as someone else mentioned, I have seen it in Hypercity in Bombay as well. (Unfortunately cook for an army every time I go back to India so I have looked!)See More

It is available in most of the mega metros where imported stuff are available. In Kolkata one can get it in Spencers south city mall, or in La protina near deshapriya park other than in new market. Alternatively, Foodfood channel of Sanjeev Kapoor showed making feta with paneer soaked in voinegar for 6 to 8 hrs....and then washin it thoroghly under running water....parmessan and other varieties as well

You can get anything from Panchetta to Foigras to Feta in India...Just gotta have the will...there are are a few dairy farmers in Goa who supply some of the upscale hotels and locals in the area with their cheeses which include aged Parmesans and flavoured fettas.... like anything in India its who you know....

Pasta Salad -- for a Light Lunch

Near my home there is a place called Tuscany.

Beautiful rolling hills, wind rustling through the olive branches, bales of golden hay rolled up in meadows....

Okay, Cut, Cut...That is the other Tuscany

Near my home there is a place called Tuscany, the Italian Gourmet Food store. BigSis loves the pasta there. I love it too but she loves it more so lets blame it on her.

The other day I got a cold pasta salad for myself from the same place. It was a very simple salad, pasta, tomatoes and red peppers tossed in olive oil and with a generous sprinkling of Feta. It was really very good. I don't sing glories of vegetarian food just like that.

Big Sis wanted a taste and then she finished almost all my share. Not so good.

But I thought, "Hey, if the kid can eat Pasta Salad at Tuscany, she can sure eat one at home. That means so much less work for me. For the next 10 years or so until she goes to college, that is what I am going to feed her. Simple, light, almost healthy Pasta Salad. That leaves me with an enormous amount of time for blogging about food that I don't need to cook. Yippee."

So I searched high and low and settled on this recipe. Only I did not have mushroom OR bell pepper OR green onion OR black olives.

That did nothing to dampen my spirits. I had Grape Tomatoes AND Baby Spinach AND more lovely Grape Tomatoes and more tender Baby Spinach.

So in a big bowl I happily poured some Olive Oil, the EVOO...glug, glug, glug

Then I splashed some Balsamic Vinegar...splash

Added some Garlic Powder, Pepper powder, Sea Salt, bit of Sugar, some Parsley Flakes...sprinkle, sprinkle, sprinkle

Whisked together.

Meanwhile cooked Pasta according to package directions and a minute extra. I had Farfalle.

I had also roasted some of the grape tomatoes earlier, they were sweet.

To the big bowl which had Olive Oil etc., I added the cooked Pasta, the roasted as well as some fresh tomatoes and baby spinach. They were tossed and turned till everyone was happily coated with the dressing.

I wanted to add sausages too but totally forgot.

I then let it chill in the refrigerator. While serving a generous sprinkle of Herbed Feta went on top.

Everyone loved it. And after two meals of that BigSis said "I love your pasta salad, but can we not have any more of it?"
