Churmur is a very popular road side snack in Bengal, served by the Phuchkawalas


We have been in official quarantine now for just over a week. The schools have been shut down for two weeks.

Online classes are going fine. For the high-schooler, it is more regimented with defined periods from 8AM to 1PM every weekday. She has online quizzes and loads of assignments to complete, keeping her busy during the day. Major plus for her is she doesn't have to wake up and catch the school bus at 6:30 in the morning. She gets a good nights sleep finally.

For the 6th grader, online classes are from 9AM to 1PM but it's bit flex and most days she finishes her assignments by noon. Every other day from 4pm to 5PM she joins her gymnastics team. On Sundays an hour long dance with the group.

In all, I see that they are getting little more time to relax and that is helping them. Hope the schools learn something from this and reduce the work load for the kids after the quarantine.

Food has not been a major issue at home yet. We are low on meat and fish but the girls are okay with that. For dinner, I am trying my hand at Rotis and Parathas these days. I am not good at making them but since evenings are no longer rushed, I am learning. Also I see that with Roti, it is easy to have a meal with just one more dish, which is a great advantage.

Lunch for me on a work day is usually light and quick. Of all the groceries I did before lockdown, there were 3 boxes of Golgappas I bought. Yes, what foresight :-D

So some days my lunch can be just this. This tangy, spicy, lip-smacking ChurMur!! For all others it doubles up as snack.


Churmur is a very popular road side snack in Bengal, served by the Phuchkawalas. For us, standing around our favorite Phuchkawala outside the College gates, it was usually the last stage of the Phuchka rounds, when we have had enough of phuchka and now wanted the phau phuckas (the free ones) crumbled into a ChurMur.

Chur-Mur if you say it aloud, rolling around your tongue is the sound of crunching of crispy golgappas. A plate of spiced and boiled potatoes, some boiled kala chana, raw onions, green chilies, green coriander leaves, spicy sweet and sour tamarind water and topping that some crumbled crispy Phuchkas. That's ChurMur for you. An explosion of tastes and flavors in your mouth.

I haven't had a street side Phuchka for years now, but I do pray that those favorite Phuchkawalas get back into business soon and serve their unique Churmur, dirt and grime be darned.

Baansh diye Dim Malaikari -- Egg Malaikari with Bamboo shoots


W are in the middle of a surreal time. 5 year later when I come back and read this post, I don't know how I will feel. In the beginning of February, when we were discussing Coronavirus, we discussed it lightly, never even fathoming how it would turn our life upside down in a few weeks.

We thought it we are careful, washed our hands, everything would be ok. Maybe a thousand people or so would get infected but they would recover. Surely the government had a plan. We were far from China, an entire ocean and many countries lay between us. The virus wouldn't travel here.

And then early February, we heard of the lockdown in Italy and it hit home a little closer. We were in beautiful Italy only two years back. I had a friend in Italy with two little kids who would update about how they were house bound and not allowed to go outside. We started worrying but still thought, this was Italy,  still far away from us.

Next it was Washington and California and a neighbor panicked as her son worked for Amazon in Seattle. We told her to calm down and that nothing will happen.

Then cases started happening in New Jersey around March 5th. SAT was canceled.

We had a Holi party in our neighborhood on March 7th, still unaware of the looming pandemic. The husband-man was still traveling the week of March 8th, though I panicked. Instead of flying, he drove to DC on March 10th for a meeting. Things were getting tense. There were many more cases, now in the low hundreds. I was still going to work, kids were still going to school. No masks could be found.

By March 11th things started getting crazy. Some people in my county had got infected from a Biogen workshop they attended in Boston. The school started sending Covid-19 regarding emails. On March 12th, many of us Moms decided to keep the kids home from school and asked the School Superintendent to take a step towards closing schools. They were still unsure. No word was there from the Governor about school closures. The administration was still waiting to hear from them.

on March 11th I did a grocery run of 2 stores -- Wal-Mart and ShopRite. I couldn't find Lysol Wipes or hand Sanitizer anywhere. It was as if our life depended on a bottle of Purell Hand Sanitizer. That was the solution to all problems. Some folks thought Toilet Paper was a solution to all problems and started hoarding those!! Later at night, I went to CVS, our pharmacy store and found 2 cans of Lysol spray.

On March 12th, I did a grocery run of 2 more stores  -- the Indian Patel and Costco. I needed Rice and Rusks and Maggi. I wasn't hoarding but we were hearing that things can go bad and we need food for at least a week. There was no chicken in Costco or Hand Sanitizers. The employees were ruffled and didn't answer questions. No one was wearing a mask. The atmosphere was borderline festive. One of the infected person in NJ wasn't doing well
.
After much coercing and panic calls, on March 12th, the husband-man told his co-workers that he was going home, and it was best everyone else did the same. Some people were unhappy. Some had flights to catch. He drove back home sometime around midnight.

On Friday, March 13th, the kids went to school. I went to work. Cases in NJ were rising. Around mid-afternoon, the schools sent an email declaring school closures for the next two weeks, until March 31st. Classes would start online. Our office said they would do a soft closure where we would still have to go to work 3 days a week but would rotate the WFH schedule so that too many people weren't together.

Om March 14th, Saturday, the kids were happy that schools will be closed next week. LS was still playing with her neighbor friend. they spent a lot of time together doing crafts and riding bikes. It was okay we thought.

On March 15th and 16th, I went to work. I wiped down all surfaces with Lysol. We all kept 6ft distances. Then we were told that offices will be closed until March 31st and we would be working from home. Most people complained. They didn't like the idea of WFH every day. I thought it was great!

It's been TEN days since and the end is nowhere near.
Cases In US have gone up like crazy upto 85K infected.
NJ alone has 6000+ cases.
I am afraid to step out. When BigSis had a cough for the last seven days, I worried so much.

I had no idea that Bamboo shoots were used in Bengali Cuisine until I saw Pritha Di's photos of a "Haansh diye Baansh" or Duck with Bamboo shoots. I knew they are popular in North-east India in Assam, Nagaland and Manipur but never knew about the Bengal part of it. Looks like bamboo shoots are a traditional food of the indigenous Jumma people, or the hill-people, in the Chittagong hill tracts of Bangladesh also.

Now, I had a can of Bamboo shoots at home, waiting for a Thai curry. But I thought what the heck let me make an egg curry with coconut milk and bamboo shoots instead, in true blue Bengali malaikari style, only this time with bamboo shoots added. 

So here is delicious Baansh diye Dim Malaikari aka Egg Malaikari with Bamboo shoots. If you don't have the bamboo shoots at home, don't step out to buy them, you can make this without them too.

Oven Roasted Brussel Sprouts -- with Sichuan Peppercorn and Peanuts



Since last December, on my morning commute, instead of tuning in to NPR, I have started listing to 102.7.

This is my daughters' favorite channel playing popular music in English, half of whose lyrics I do not understand. Like really not understand. For a long time, I would hum Pink's "Beautiful Trauma" as Mala Mantra Mala....

Until now, every evening, we would actually get into a fight because as soon as they got into the car, they would flip my car radio channel to 102.7 and disrupt my NPR or Radio Mirchi listening. Since December, I have voluntarily flipped to 102.7 in the mornings, to listen to holiday songs and stayed on because the Morning show is very funny. Like really, laugh out loud funny. And I need funnies to get my mind away from the news.

So yesterday, I was tuned on to the show, and this caller calls in about his girl-friend not returning his call blah, blah. It seems this is one of their regular segments where the RJ's then call up the girlfriend/boyfriend and gift them an all paid date, if they agree to go out together. So anyway, the girlfriend is called, she picks up the phone and seems not very enthusiastic about this all paid for date thing. They then ask her, if there was anything wrong and she goes, "Well, he is very nice and everything but he said he loves me within 2-weeks of knowing each other and I am afraid, he can propose anytime. I find it very insincere that someone can say "I LOVE YOU" in 2-weeks!"

Having been brought up on healthy doses of Bollywood where the pair falls in love the minute they see each other and burst into a song at the end of the first meeting, I have always lamented that "love at first sight" has always eluded me. That it could be insincere is something I only now realized. The lady had a point.

However the caller guy, refused to understand this and kept pushing if he could meet her or come over and such. The lady very patiently explained that she liked it slow, and what he was doing was too much for her. The guy sounded, really desperate and I doubt their relationship will last. He was trying to do too much, too fast.

That could or could not be the problem for this Brussels Sprouts Dish. I was giving those cute vegetables too much attention and too many ingredients. Like usually I just roast them in the oven and they are good that way.
This time I seasoned them with Oil flavored with aromatics like garlic, ginger and my new found love Sichuan peppercorns. I also added a little of Maple Syrup to add a hint of sweetness

And then as if that was not enough, I roasted and crushed peanuts and added that on top of the roasted vegetables.

I am not sure if my Brussel Sprouts were feeling claustrophobic with all the attention because we ate all of them. This is one vegetable 75% of the family loves, only Little Sis does not eat her Brussel sprouts!

Quinoa and Samo Khichdi - with Madhulika Liddle's tomato tadka

It's the New year and there's lot going on in the world, and you are probably thinking "What a way to start!!" But then you get on with your life and think how you can survive and whether or not you should stick to your resolutions or just give them up, since the world is anyway coming to an end.

Speaking of resolutions, I am sure at least 70% of people in this world have "healthy eating" in the top of their resolutions.

I don't have resolutions but I do like eating healthy, especially after the heavy feasting that happens during the holiday season. And we did eat a lot. Like every year, we were on our annual getaway with few friends from college and their families. This time we had rented a log cabin in the middle of nowhere in Virginia, with a fantastic view. We ate out, we ate in, we chatted and cooked and ushered in the New year at a fancy mediterranean lounge in Maryland. It was fun but now I need to detox for a few days and bring my body back to regular routine.





I am not very good with diets so "keto" or "IF" are not meal plans that I can stick to. Instead I try to inculcate somewhat of a healthy eating during the week and do portion controls. That makes me feel better from the inside.

When I saw Madhulika's khichuri on facebook last year, I was very intrigued by the last step of it. The thing caught my attention because of its unique tomatoey tadka. It was very different. In our Bengali home, we are used to 3 types of Khichuri -- Bhuni Khichuri which is more like a pulao, the Bhog er khichuri with roasted yellow moong and the regular Masoor Dal er Khichuri. None of them feature a tadka like this.


@madhulikaliddle as many of you know is a fiction author of repute and I love her short stories. Her historical murder mysteries are more popular I believe.
Any which way, I am pretty much in awe of her. Having written only one book and nurturing this secret aspiration to write more, I am always in awe of authors who have successfully written and published several.

So, when I saw her khichdi recipe I knew it would be a killer. Wait not that murder mystery "killer" 😜.

I adapted the recipe to reduce the carbs and add some more healthy grains and this is how I did it. I used Quinoa and Samo Rice instead of white rice.  Samo rice known as millet (Kodri) or Morio Seed, also called ‘Jungle Rice’, as it grows wild along with grass in the rice paddy fields. It is gluten free, has less calorie and less sugar content. In India, it is used during the time of fasting and called "Vrat ke Chawal". Quinoa is also a seed rich in proteins, dietary fiber and vitamins.

The original recipe was with rice and whole masoor.

This is the simplest that a one-pot meal can get. With added vegetables and a fried egg while serving, it has everything a weeknight dinner needs. Plus, it is very quick and requires minimal chopping or grinding. With that less work, the result is so delicious that you shouldn't pass this on!

Chicken Roast for Christmas


Christmas is right here, the year is done, and I have been super lazy this month. The last few days has been crazy as it always does when the holidays are upon you and you have procrastinated.

But not my fault totally. The thing is my India trip this November, totally messed me. Though there was a lot of running around to do while I was there, I did not have to do any of the daily chores. I mean, no meal planning, no lunch or dinner to cook, no clothes to fold, even the cup of lebu-cha was brewed and brought to me. That kind of luxury goes to your head.

*At this point, if you are in India and reading my blog, you are probably rolling your eyes*

I get it. That is normal for you. Most of my friends and cousins back home, actually look upon me with pity if I happen to tell them that I actually have to cook the lunch that I pack for the school lunch boxes!! We live a hard life, I am telling you.

So anyway, all that life of pleasure totally ruined my system and I have calmly delegated almost all cooking to the husband man or to our favorite Sichuan restaurant.

If I had continued to live in India, I am telling you this blog would just go defunct. Thank God for small mercies!

Now, a couple of you had messaged me, asking to share a roast chicken recipe. I get it, it's Christmas and  a roast chicken is a delicious thing for a Christmas lunch. Also it's just the kind of dish you would like to make all through winter.  It is a one-pot, rather one-tray dish and you can stand near the oven and watch Netflix, all warm and toasty. Yes, I have my own weird reasons for cooking.

Whenever I make roast chicken, I do it with Cornish hens. We are not big meat eaters and two Cornish hens is perfect for our family of 4.  These are smaller hens which taste really delicious and easier to handle for klutz-es like me. Don't be ashamed of being a klutz. I am one and the world needs all kinds 🤓.

This roast chicken recipe that I follow is fairly simple.🍗 I don't have the exact measures but if you are in doubt about how much olive oil or butter, i would just say err on the higher side.

Recipe is for 1 small Cornish Hen

Wash the chicken thoroughly inside out and remove giblets if any. They will be in a small pack, for your ease, the store does that!
Oh! And don't forget to pat the chicken dry.

Now I take half a lemon 🍋 and rub it around the inside cavity of the hen. I also rub it in any crevices and nooks and crannies. Lemon is like deodorant for the hen.

Then I make a spice paste with following
🍂Olive Oil ~ 3-4 Tbsp
🍂Little butter ~ 2 Tbsp
🍂Garlic paste ~ 1 Tbsp
🍂Ginger paste ~ 1/2 Tbsp
🍂Tandoori masala or Garam Masala ~ 1 tsp
🍂Black pepper powder ~ 1 tsp (best if you powder whole black peppercorns)
🍂 Red Chili Powder ~ 1 tsp
🍂Salt
Mmm...so good.

Rub this paste around the inside cavity of the hen. Then gently lift the outer skin and massage the spice paste on the outer side.Make sure the spices and butter reach all the crevices. I have never had a massage this good myself.
Rub the paste on all sides of the chicken as you want your whole chicken to be flavorful.

Liberally salt the inside and outside of the chicken.

Let the chicken rest for one whole hour. It has done hard work.

Pre-heat oven to 425F



Now heat olive oil in a skillet and brown the hen on the outside. The skin should turn a pale golden.
🐥It is NOT necessary to do this skillet step. Instead you can just brush the outside of the chicken with olive oil+butter.

Now arrange the chicken on a roasting tray. Stuff the inside with whole sprigs of rosemary, plenty of cloves of garlic and lemon halves. You can add vegetables like small potatoes, carrots, onions to roast in the same tray.

Roast for 70 mins to 90 mins at 425 F. You will know it is done when juice runs clear when cut between leg and thigh.
🐥Baste the chicken with the olive oil+butter+dripping-in-tray halfway through the cooking

Serve with bread, salad and the roasted vegetables.

3 Ingredient Oreo Cookies Ice cream



Summer temperatures have been high around here and that can only mean ice cream and more ice cream.

This "No Ice cream Maker" recipe is so easy that any kid could do it and that's what Little Sis did. Well she is not that little any more. Almost eleven.

But what I am saying is, this recipes is so easy that any kid in elementary school who can follow some instructions should be able to make this ice cream.



Honestly taking a photo of this ice cream was more difficult than making it. Since the oreos had been crumbled and the rest devoured by the girls, we couldn't find any Oreo cookie to style the ice cream photo. That is when Big Sis suggested to put a tiny piece of brownie (she had just made a batch for her friend) on the ice cream. That is what you see there and Li'l Sis said it was a good addition to the ice cream actually. Sugar on Sugar.

But then that's what our short lived summers are for.

3 Ingredient Oreo Cookies Ice cream

What you Need



Heavy Cream or Whipping Cream -- 1 Cup

Condensed Milk -- 1/2 Cup or 4oz (a little less than this is okay)



Oreo Cookies -- 10-15 Oreo Cookies crumbled (Either crumble them with a rolling pin or use a mixer)
Note: We had Thins so used about 15

How I Did It

Beat heavy cream/whipping cream at high speed setting until soft peaks form. Speed setting 6 for 6 minutes. This was our KitchenAid setting.
You could use a hand mixer or even beat with a whisk but the latter would take longer time.

Add Condensed Milk to the heavy cream and stir to mix.

Add the crumbled Oreos. Mix well.




Pour this heavenly mixture in an air-tight glass container. Cover with lid. Put in freezer.

Take out after 8-10 hours. Ice cream will be set by then.

Grilled Chicken with Sate Oil



I have been obsessed with this grilled chicken recipe and had to share it here. It is perfect for the summer. A little marination and a whole lot of flavor.

Usually I marinate my chicken with Indian spices for grilling. However that was getting kind of boring. The other marinades that the husband-man uses is bit bland for my taste and the chicken is not as juicy as I want to be. psst... he doesn't agree though.

Until...yes until last week...when this recipe changed my life and grilled chicken's.

The recipe is from Bon Appetit magazine, an annual subscription gifted by my lovely friend. I took two recipes of Chef Tom Cunanan and then made them my own.

First, I was blown away by the Sate Oil. This is very similar to the Chili Garlic oil that you get at Chinese or Thai restaurants.



Next was grilled Chicken where the chicken was marinated in a brine and that contained guess what ? SPRITE. Yes, sprite. The sweet-lemony and fizzy sprite did do wonders to the chicken. The aromatics (yes the author kept saying aromatics for ginger, garlic etc and I loved it) in the brine add a lot of flavor to the meat. The meat was also very juicy and did not become at all dry after grilling.

The original recipe of the grilled chicken called Chicken Inalsa, involved Acchiote Oil but I did not have it.

So, I grilled the chicken as per the recipes and then basted it with previously made Sate Oil. The best thing ever. That oil is amazing. Be liberal with Sate Oil if you wish to kick up the flavors. Serve grilled chicken with a simple salad, add it to pasta, or in a sandwich. It is delicious.

Niramish Mangsho -- Shubho Barsho

Niramish Mangsho, Bengali Vegetarian Mutton Curry

Tomorrow is  Poila Boishakh, the first day of Boishakh ushering in the Bengali New year. While the English NewYear involves a lot of hard work like late night partying, looking back, looking forward, making resolutions, blah, blah...the Bengali New Year is much more relaxed and laid back in style.

During the 80's and early 90's, Bengali New year was all about 3 things --
(1) wearing new clothes (2) feasting at home (3) visiting stores and collecting single page Bengali calendars rolled in a narrow cylinder and cardboard boxes of sweets and shingaras. In addition to that there was the usual cultural stuff , involving Rabindrasangeet , because how can a Bengali celebrate anything without kalchar -- but I was not greatly interested in them.

Now, #1 holds no attraction for me and it has been almost 30 years since #3. So that leaves us with #2 as the only way to usher in the New Year.  Not necessarily at home but anywhere. Today, we had one of our classmates visiting us from Finland and so we had our Notun Bochor celebration a day early with lots of Bengali food at home.



This Niramish Mangsho, is something I cooked last weekend and have been thinking of sharing with you but the week just got so busy that I didn't get a chance.

Niramish Mangsho or "Vegetarian Mutton Curry" would sound like an oxymoron to most except a Bengali.

To my ears, it sounds perfectly logical since I have grown up hearing about it. Every year, around Kalipujo, my Father would reminisce about one his Uncles, an ardent devotee of the Goddess Kali. This extremely spiritual Uncle, who practiced a strict vegetarian diet all 364 days of the year, would become the greatest meat eating glutton on the day of Kali Pujo. The sacrificial goat for Goddess Kali would be cooked without any onion or garlic and that mutton curry, labeled as "Niramish Mangsho" would be enjoyed by her devout followers as "maha proshaad" -- the blessed mutton curry!!!

As a child I was awed by this show of reverence. How could someone forego meat for one whole year and the satiate his cravings on just one day? And that too with a mutton curry that was cooked without any onion or garlic. Must be very blehh in taste...I thought!!

I might have have tasted that mutton curry during Kali pujo, a small piece as a portion of a larger proshaad, but it did not really make enough of an impact to my childhood palate. I preferred the "Robibar er Mutton Curry" cooked by my Mother on Sundays.

Recently as I was trying to look up more about this Niramish Mangsho, I found that it had a lot of similarity with Kasmiri Brahmin recipe of Rogan Josh which too is made without any onion or garlic. Onion and garlic were not very popular ingredients in the Hindu kitchen yet and Asafoetida or Hing is the major flavoring agent in both the recipes.

In Utsa Ray's book "Culinary Culture in Colonial India", he mentions the the first Bengali cookbook Pakrajeswar(published in 1831) and the second, Byanjan-ratnakar(in 1858).

Ray says -- " Mutton recipes described there hardly prescribed the use of onion or garlic, something frequently used in Mughlai cuisine. The author of Pakrajeswar clearly stated that since people in the region hardly consumed onion, he had refrained from listing it as an essential ingredient in the recipes. Byanjan-ratnakar also did not include onion and garlic in its repertoire of recipes. It can be understood that the readers of Pakrajeswar were mostly Hindus who were not very accustomed to having garlic and onion in their food as yet."

In the same book he also mentions Mukundaram’s Chandimangal composed in late 16th century, which has elaborate lists of what was being cooked in the families of the trading castes and mentions--"Generally, the spices used for cooking fish and mutton were asafoetida and cumin."

We can then extrapolate that Mutton curry cooked without any onion or garlic was the norm in Hindu Bengali families in those times and so "Niramish Mangsho" was not really an anomaly. It was therefore very natural that the goat sacrificed to the Goddess Durga on the ninth day (Nabami) of Durga Pujo and to Goddess Kali on Kalipujo was also cooked in a similar way and offered as prashad.

I cooked this Mutton curry taking cues from Rogan Josh and my Mother's tip of using asafoetida+ginger to temper purely vegetarian curries. I have used whole Garam Masala and the Garam Masala powder just like we do for our regular mutton curry. For the wet spice paste, the very Bengali jeere-dhone baata, I have taken Kashmiri liberty and added some fennel seeds. Fennel seeds was probably not used in Bengali mutton curries. This dish is cooked in ghee in many recipe, however I have cooked it in Mustard Oil and added little ghee towards the end. Cooking it in ghee will definitely add more flavor.

The Mutton Curry was truly flavorful delicious. You wouldn't miss the garlic and onion at all in this dish. However it tastes best when had the same day as cooked and it does not keep well in the refrigerator.

Daab Chingri, or prawns cooked in tender coconut shell is more of an urban Bengali dish, made very popular by restaurants. The base recipe is very much like shorshe chingri bhaape, where prawns are mixed in a mustard-coconut paste and then steamed. Here the steaming or cooking happens in a tender green coconut shell, with the the tender coconut(daab) and its cream(daab er malai) elevating the flavor of the dish. 


Not all recipes start with a line like "And in my grandmother's kitchen..."

Neither do all recipes have a boat load of nostalgia tied to them.

But one thing is true, every delicious recipe is triggered by the memory of a meal.

I had never seen a Daab Chingri cooked in my grandmother's kitchen. Neither did my Mother ever make it. Daab aka Tender Young Coconut was very popular in India and we loved it as a drink. Bonus was the tender meat of the coconut -- the shaansh. But prawns cooked in the shell of a tender green coconut? It never featured in any of my childhood meals!

Now Shorshe Chingri Bhaape, where prawns were mixed with a mustard-coconut paste and steamed, was a very popular dish in my home. Only it was steamed in a sealed stainless steel container, that was put either in a pot of rice being cooked or in a pressure cooker. Sometimes, and only sometimes, in my Dida's kitchen, shrimp, coconut and mustard paste would be tossed together, put in a coconut shell and tucked into the dying embers of a unoon. But that was not Daab, that was the hard cooconut shell, it was more of a hasty practical dish and not fancy.


I started hearing about Daab Chingri only when finer Bengali food restaurants started sprouting around Kolkata metropolis. Unlike the paise hotels, which served everyday Bengali meals to the masses, these restaurants offered fine dining in a lovely ambiance and a menu that boasted of Bengali delicacies -- some known and some concocted. I have a hunch that "Daab Chingri" was a brilliant idea spawned by one of them. It tasted delicious like Chingri Bhaape and was very unique in its presentation style. No wonder the dish took off swiftly and spread like wild fire.

Soon, every other person started saying "The Bengali traditional Daab Chingri cooked by my grandmother....". Like really? Your grandmother in the 60s, 70s, 80s and even early 90s cooked Daab Chingri in her kitchen? Errr...think twice!

But to be honest, Daab Chingri is more of an urban Bengali dish and not one of those traditional ones with boatmen, Portuguese, Thakurbari and history written all over them.

So anyway, having heard so much about this dish, I wanted to desperately try it. Last time during my India trip, my parents took me to 6 Ballygunge Place. Beautiful decor, awesome table settings, very unique menu -- I was blown over! And they had Daab Chingri on the menu. I had to order it of course. It was a beautiful dish no doubt but I had a feeling that the prawns were cooked prior and then the dish finished off in the Daab. No harm done of course. Maybe this is how one makes Daab Chingri, I concluded.

Then last week, my very talented friend Moumita made Daab Chingri at home and shared with me. It was delicious. The Daab that we get here is not the green coconut served in Indian restaurants, but a slightly more mature version, stripped of the green exterior.

Today, I had a deep desire to cook Daab Chingri at home. Moumita was away from her phone. I started browsing recipes on the internet and each involved garlic, cream, paanchphoron and what not 😡😭. That's not how  I envisioned Daab Chingri. I knew my Daab Chingri would be the mustard-coconut one and not the garlic-cream one.

I then, texted another friend Baishali and she promptly shared two recipes with me. Both her recipes were exactly how I wanted them to be and here's what sealed the deal. Her recipes were very, very easy.

In fact one of them was done totally in the Microwave. As I was experimenting, I tried both the Oven and Microwave method. With lots of green Chili, the sharp mustard paste mellowed by the mildly sweet Coconut, golden Mustard Oil, and succulent prawns -- this was a beautiful dish. Triggered by the memory of a meal and aided by friends, it was dish I would always treasure.💓

To be honest, it is very much like the Shorshe Chingri Bhaape who has gone to a glamorous party. The Tender Coconut Shell definitely adds some panache to the presentation and lends a layer of coconut flavor to the dish.

Roasted Cauliflower Orange -- Phulkopi Komola Roast



I recently came to know about Phulkopi Komola, a Bengali dish where Cauliflower is cooked with oranges.

I had never ever heard of such a thing before. In our middle class family, we ate KomlaLebu with beet noon on winter afternoons, sitting on the terrace, our back to the sun and a book in front. My Ma, made a Komola Lebu'r kheer on occasions that deemed such extravaganza and that Kheer was so delicious that I cannot even explain in words. Other than that, oranges were had on their own.

Well, anyway, the pairing of Cauliflower with Oranges seemed like a brilliant idea, so I thought why not? But I didn't want to cook them the traditional Phulkopi dalna (cauliflower curry) way. I wanted to roast them. Cauliflowers I roast often. But this time, I wanted to add oranges (clementines to be precise) to the roast.

So Cauliflowers, tiny potatoes, oranges, and some carrots(optional) were chopped. Tossed with some tandoori masala, olive oil, chili powder and even garlic it was a pretty dish to look at and delicious to eat.The oranges gave a tiny kick of sweetness and flavor to the cauliflowers. I added some green peas to add color to the dish and it was an excellent idea. The whole dish is pretty simple to make and the cooking time is the time for you to relax and watch Netflix.

Easy Garlicky Chingri -- for Dugga Pujo


Durga Pujo is not a time to cook your own food. I mean ideally Ma Durga does not cook on these five days. Neither does Lokkhi, Saraswati, Ganesh or that Karthik? Maybe Baba Shib does, but then again I am not sure.So why should you , tell me?

And then if you do cook, who is going to eat it? I mean after eating bhoger khichuri at the pujo pandal, tons of phuchka just outside the pandal, egg roll on the left of the pandal, mutton biriyani only a few steps away from the pandal, fish kobiraji ordered by phone from the pandal, how will you eat the food cooked at home?
Thus it has been logically proven that there is ABSOLUTELY NO-NEED to cook during the Pujo days. QED!

But for us mere mortals, living away from such overdose of pandals, life is difficult.

Durga too understands our problem and mostly visits us only during weekends. During the week she is "chakki pishing and cooking dinner". Our relatives back home smirk at our plight and thank their stars that they did not go and get a visa stamped. They rustle their heavy silks, bite on their kashundi smeared fish kobiraji, pat their heavily powdered nose and lament, "Aha, ki koshto, Ashtami teo ranna korte hochche re?"

We look away from their kashundi-fied selfie, take deep breaths, think how claustrophobic the crowd in the pandals would make us feel and how all that phuchka can end in nothing good but gelusil and choan dhekur. "Jak baba, eikahnei bhalo achi", we reassure ourselves and contemplate on ways to make a mid-week Saptami dinner more interesting.

And then when the fall air carries with it a fragrance of wood smoke, we carelessly let our minds wander away to the pujo pandals of our childhood where amidst the heavy fragrant smoke of Dhuno, Ma Durga's face came alive with gorjon oil and after hours of fasting for anjali, steaming hot Khichuri in shaal pata doled out at the back of the mandap tasted no less than amrito.

Salmon Posto -- Salmon in Poppy Seed paste


Salmon was not a fish I loved when I first set foot on the shores of this country. I liked neither the taste nor the smell. The very thought of ordering a salmon sent me into bottomless despair. "What is this country where the fish does not taste like Ilish or Rui", I would often cry, my patriotic heart wailing for fish from my motherland. It is always about the food and the fish, isn't it?

I was convinced that my husband's Bong colleague who had gone about the office inviting folks in what sounded like "Plish come to my house, I make pish for you" was actually referring to salmon.

But then the only salmon dishes that we had were in the restaurants, which then were very bland for my taste buds. I was also not fond of the skin-on-salmon and had no idea that I could request the fishmonger to take the skin off.

But we live and learn. We adapt. We love new things and then cannot live without them

Learning from friends, improvising and experimenting, searching the web. we have now found many delicious ways to eat Salmon. It is one of the few fish which adapts itself well to Bengali style dishes like "Shorshe diye Salmon", "Doi Salmon", "Salmon er paaturior even a Salmon kalia. Our Salmon experience improved for the better when a friend suggested to bake salmon at a lower heat than other fish. It keeps the fish juicy, he said. And by God, it did. It was so much better and moist when baked at 275F.

A couple of days back I made a Salmon Posto. Rui Posto is something that my Mother makes. I love anything with Posto and so to give salmon a makeover, I made Salmon Posto or salmon in Poppy Seed Curry. You can use any other fish like Rui, Kaatla, Bhetki, Swai or Tilapia in this recipe too. The traditional way is to fry the fish before adding to the posto gravy but of course I baked my salmon.

Also do remember, anything with Posto tastes best with white rice, so though the photo has red rice on the plate, if you have white rice stick to it.

Sheem Posto with Kasundi -- Snow Peas with Poppy seeds and Mustard


I have this habit of switching veggies, concocting recipes, substituting one ingredient with another. So it is no surprise that I hardly ever buy sheem, which we never find fresh at our Indian grocers anyway. Instead I buy the fresh, tender, translucent green snow peas from the Asian Market and substitute it for sheem!

With those fresh, tender, translucent green snow peas...ahem, I mostly make Dhonepata Bata Sheem. That dish is so freaking good that I cannot even begin telling you.

The one time that I actually cooked with sheem, and made a Tel Sheem, was when a blogger friend Soma, who grows amazing vegetables, sent me a box of tender sheem from her own garden. Those were soft and buttery and one look at them and you would fall in love.



Recently a friend had made Shorshe Sheem and the husband-man loved it. With snow peas in my refrigerator I thought of making a "shorshe sheem" today. Only, I felt extremely lazy and did not want to soak mustard seeds and then make a paste of it. I also don't have the smaller Magic Bullet jar anymore and to make a paste in the bigger jar, I would have to make a larger quantity. Instead, I decided to make a "Posto Sheem with Kasundi". So there would be posto and kasundi from a bottle and it would taste as wonderful.

Salsa Fish -- when Mexican meets Bengali



I don't have a lot of time to write today. I had promised to post this last week but then last week was super busy like any other. So if I start writing, this recipe will never see the light of the published blog!!

A quick note to say, that this Salsa Fish is my recipe, mine and mine alone. So don't compare it to salsa fish of a mom from Tijuana or to your neighborhood TexMex restaurant. Maybe she makes it this way or maybe the restaurant makes it better, I don't know. I have never had it at any Mexican restaurant here either. The inspiration came from our very own tomato fish and of course salsa.

So I make a mean salsa and my salsa has tomatoes, garlic, cumin, jalapenos, coriander leaves, sugar and salt. And then a couple of weeks back I thought since I am already making this why don't I use this to make a fish. That is what I did and called it Salsa fish. It had gravy and tasted like maacher jhol that a mom in Tijuana would make.

I served it with rice, and loads chopped onions, tomatoes and some jalapenos.



Then again few days back I made a similar fish, but not much gravy. I also added green peppers. Same salsa as the base. This was a drier salsa fish.

This is when I saw my housecleaning lady had put up her dinner photo on her WhatsApp status and there were tacos and guac and salsa and all very authentic as the mother in Tijuana would make. Not the American tacos that on the border makes.



Inspired I assembled a similar dinner. Multigrain tortillas made the base. Rest all were already there, how we served it, changed the scene and country!! So if you want, you can serve the salsa fish that way too.

Nolen Gur Shooters -- for Ma Saraswati


So all this shooter-wooter was initiated by a single text. A text from a friend's little sister living in London.

Last month she sent me a message "BMdi, do you have a Nolen Gur er souffle recipe?"

Until that very moment I had no idea of any existence of "Nolen Gur er Souffle". A souffle as I know it is this --"A soufflé is a baked egg-based dish which originated in early eighteenth century France. It is made with egg yolks and beaten egg whites combined with various other ingredients and served as a savory main dish or sweetened as a dessert."

So would a Nolen Gur er souffle be an egg based dessert sweetened by Nolen gur or would it be a faux eggless version? I didn't know!

"How do they make it I asked?".
This particular young lady had earlier shared her secret malai kabab recipe with me and they were the very best, and so I hoped she would know this one too. (Will post that kabab recipe sometime).

"I don't know. Balaram Maullick has it," she replied back.

Since that day, I kept on thinking of Nolen gur er souffle. After a bit of research and since I wasn't sure if I should or should not add eggs, I finally decided on a mousse kind of recipe. After all a mousse -- a mousse is a soft prepared food that incorporates air bubbles to give it a light and airy texture-- is a close cousin of a souffle. The bonus point was mousse can get its foaminess from whipping cream and not always eggs. Perfect!

Now since I am a very lazy-bone, I found the simplest of all mousse recipes that needs only two ingredients. And then decided to jazz it up and serve them as shooters.

Now, Nolen gur or Khejur Gur is a very precious commodity for me. I don't get good ones here. My Ma buys them in winter and then saves some for me. She usually tries to send it through anyone who is flying to USA from DumDum Airport. Actually she did that more frequently earlier until folks stopped telling her that they are flying to USA. "Nope,  I am not flying to US. Jhumritalaiya has a new airport called JFK."

I use my limited stash very very judiciously. Birthday paayesh and such only gets to see my Khejur Gur. So I wasn't just going to make Nolen Gur shooters for my own pleasure. Nope. So I waited and waited for the right moment... and here its.

These Nolen Gur Shooters are Ma Saraswati's proshad tomorrow. I bet she will be very happy.
